Kozinaki from green buckwheat

Ingredients

green buckwheat 0.5 cups
dates 0.5 cups
dried apricots 0.5 cups
lemon juice 1/2 pc
cinnamon 1/2 tsp

Cooking method

  • Dry buckwheat sprouts until crisp. You can use unsprouted grains - they are also quite soft and brittle.
  • Put dried apricots, dates and cinnamon in a blender, add lemon juice and chop. Add a little water if necessary.
  • Put the mixture in a large bowl and add buckwheat, mix everything well.
  • Spread the mixture in an even thin layer (about 0.5 cm) on baking paper or in drying trays. Dry in the oven at 50 degrees with the door open for 10-12 hours. I dried for 5 hours at 60 degrees.
  • Cut ready-made kozinaki into portions.

Note

Green buckwheat is a unique product with dietary properties. Approximately 60% it consists of complex carbohydrates, 15% of proteins, 10% of fiber, and the remaining 5% is vitamins, trace elements and amino acids (and essential for the human body, but not synthesized in our cells). Due to its unique composition, in addition to the general strengthening effect, buckwheat seeds increase the level of hemoglobin, strengthen the walls of blood vessels, and reduce capillary fragility. They are recommended for prophylaxis and as an adjuvant in the treatment of various vascular diseases, anemia, diabetes mellitus, chronic stress. The greatest benefit from buckwheat will be if you leave it alive, without heat treatment, retaining all the vitamins, minerals, all those nutrients that it is so rich in. Green buckwheat is most useful to eat not just raw, but in a sprouted state.

Green buckwheat germinates very quickly and easily. After washing from dust and impurities, it is enough to fill it with clean drinking water for 2-3 hours and leave it to swell under a lid in any container convenient for you. Then it is necessary to thoroughly rinse it again under the pressure of water several times in order to wash off the secreted mucus characteristic of this culture. Leave the washed grains under a loosely closed lid without water, but in a moist state for another 12-16 hours. The main thing is to provide three factors for germination - air access, darkness and moisture. The hatched small tails will indicate the correct fulfillment of all conditions and readiness for use. In no case do not process the seedlings thermally, because they are valuable in their raw form. The use of this "live food" can be started with 1-2 tbsp. l. on an empty stomach and gradually bring to a whole handful, complementing with leafy vegetables (spinach, salad, green onions) and delicious spices, olive oil.
If you have sprouted more buckwheat than you could eat within 2-3 days (at this time it can be stored in the refrigerator), then you can dry the seedlings in an ordinary household vegetable dryer, after setting the drying temperature to 40-42 C. Thus , the activated enzymes will not die, and you will get a dry crunchy product, similar in taste to nuts, fragile, crumbly and tasty. Such "lively" dried green buckwheat can be used to prepare healthy cookies in the same dryer and various muesli, which are convenient to take on a hike.
For those who are not yet ready to experiment with sprouting, you can simply replace the usual green buckwheat: boil, add to soups, use with vegetables for filling pies. Its taste is completely different from the usual, so remove expectations and just try new things. After all, it is still much healthier than industrially processed brown cereal.

Of course, you can cut it right away, I wrote as it was given in the recipe. I sketched out the cut lines a little, without cutting through to the end.

I think no. But the temperature should be no more than 40 degrees. I dried at 500 - 5 hours in the oven. I don't have a dryer, and I didn't want to use the oven for a long time, so I increased the temperature. After the end of the drying process, the kozinaki were soft, and then dried up naturally.
In the dryer I think it is more convenient to dry, you can cut it right away, but you need to make sure that it does not dry out too much. I didn't want them to be completely dry.
