Zurich Tirggel Cookies

Ingredients

Flour psh. 350 g
Honey 250 g
Pink water 1 tbsp. l.
Granulated sugar 50 g
Cinnamon 1/2 tsp
Cloves, ginger, anise, ground coriander by a pinch

Cooking method

  • Tirgell, or Zuri-Tirggel, are the famous Zurich biscuits that are especially popular at Christmas. To bake it, special press forms with pictures are used that can depict Christmas motives, family coats of arms, scenes from life, and any other patterns and inscriptions. What is typical for this particular cookie is that it is baked in the upper part of the oven on a very high overhead heat, quickly acquiring a thick brown hue, while the lower part of the cookie should remain light. The cookies are very strong, so they eat them by breaking off small pieces and slowly dissolving them in the mouth. Tirggel is considered a reliable energy supplier and is therefore especially valued by athletes who need to quickly replenish their carbohydrate loss. The first written mention of this cookie in Zurich dates back to 1461.
  • Mix honey, sugar, rose water and spices and heat in a water bath until the sugar is completely dissolved.

  • Cool, add flour and knead a dense, but not sticky dough. Wrap it in plastic and leave to rest at room temperature overnight.

  • Roll out the dough on a floured surface to a thickness of 2 mm, cut out blank templates and place them on a baking sheet. It is not recommended to use paper as the baking temperature is very high!

Rose water is sold in oriental spices. I don't know where in Moscow, we have - Indian shops sell it. I'd bring you, but I usually come running for a day or two. And it gives both aroma and taste, and slightly liquefies the dough. Here.

Rose water at home
To make rose water at home, take three handfuls of pure scented rose petals and pour 6 cups of water into a large saucepan. Put on a small fire and let it boil; cook until halved. Throw through a sieve to remove the petals and the rose water is ready.
Substitutions
If you need to replace rose water, use almond extract (use less) or vanilla extract (less), or rose essence.
