Vegetable tortillas

Ingredients

dough:
serum 150g
water 150g
wheat flour 1c 300g
spelled flour 100g
sugar 1 tbsp. l.
yeast 0.5 tsp
dough:
all dough
spelled flour 100g
wheat flour 1c 300g
vegetables 600g
salt 12g
oil 40g
dry yeast 1 tsp
cheese, seasonings

Cooking method

  • The specified amount is suitable for 2 large cakes (32-34 cm in diameter, about 5 cm high), 3 medium (26-30 cm, 3-4 cm) or 4 small (20-22 cm, 3-4 cm). You can make from one type of vegetables, or you can make several types at once (I made 3 different cakes). Mix the dough, I did it in HP. The dough is very sticky, sticks to hands and walls. Therefore, it is advisable to grease your hands and bowl with oil:
  • Vegetable tortillas
  • Transfer to greased bags, immediately dividing into the required number of cakes.

  • If you are planning one kind, then you can put the whole dough in one container, close it with a lid or film. Leave to rise at room temperature for 1 hour, put in the refrigerator for 12-24 hours. Take out an hour before kneading the dough, let it warm. The dough goes very well even in the refrigerator:

  • While the dough is warming up, prepare the vegetables. The number of vegetables is determined based on the number and size of cakes: 2 x 300g, 3 x 200g, 4 x 150g. If you make one type of vegetables, then you can immediately prepare 600g. Grate vegetables or finely chop and microwave at full power for 5-10 minutes depending on weight, squeeze, cool. Grind with a blender. Fold in the HP bowl, add the required amount of the remaining ingredients for the dough (based on the number of cakes) and dough. Knead for about 10 minutes. The dough is also quite sticky, so it is better to grease your hands with butter. Shape into a cake and leave to rise on parchment or in a mold for 1 hour. Bake in an oven preheated to 200 * C, throwing on a preheated baking sheet, for about 20-30 minutes.
  • I made from potatoes, cabbage, spinach, pumpkin, zucchini. I found the most delicious cakes made from cabbage (or potatoes) with onions and cheese, zucchini (or pumpkin) with sun-dried tomatoes and spinach with lemon. I will give specific examples.
  • Large tortillas from cabbage and potatoes with onions.
  • Divide the dough into 2 equal parts, 355g each. For the dough, prepare 250g of cabbage (chop) and 250g of potatoes (grate), cook them separately for 10 minutes, squeeze well and cool. Chop 100g of onion and fry until golden brown. Put cabbage, 50g of onion, dough 355g, spelled flour 50g and wheat flour 150g, salt 6g, butter 20g, yeast 0.5 tsp, grated cheese 30g into a bowl of HP. Knead the dough for 8 minutes, put in a mold. Also cook with potatoes. Brush with beaten egg and sprinkle with grated cheese before baking.

  • Small Spinach Tortillas:

  • Medium flatbread with squash (pumpkin) and sun-dried tomatoes
  • Divide the dough into 3 parts. For the dough, grate 300g zucchini and 150g pumpkin, heat the zucchini at full power for 8 minutes and pumpkin for 5 minutes (separately). Put 1 part of the dough, pumpkin, 2 tsp in a bowl. tomato paste, oregano, 35g spelled, 100g wheat flour, 15g olive oil, yeast 1 / 3h. l., knead for 8 minutes, add 30g of sun-dried tomatoes at the last minute. Form a cake. Also do with a goblet, increasing everything by 2 times and folding 2 packages of dough. Form 2 cakes. Brush with egg and sprinkle with basil before baking.

Note

The dough is very porous and airy. The taste of vegetables is very good. I baked in the Princess pizza maker for 18-20 minutes from a cold state or 10-12 minutes from a hot one.

Lina, I’ll take this to my husband in the hospital! And then some show off, they don't want to eat anything. And I'll definitely feed it with cabbage. Day after tomorrow. Current flour will be 2nd grade and whole grain.

Oh, and I'm even more with potatoes and fried onions ... So, we will do two options. Damn, I forgot, my daughter will halve it with potatoes ... Tomorrow morning I'll put the dough, I'll bake it on Friday morning and take the lukewarm ones ... Well, not all, of course!
