Rye custard with caraway seeds

Ingredients

Fermented malt 4 tbsp. l.
Boiling water 100 ml.
Water 50 ml.
Yeast 2 tsp
Water 250 ml.
Rye flour 300 BC
Salt 2 tsp
Wheat flour 270 BC
Honey 2 tbsp. l.
Vegetable oil 2 tbsp. l.
Caraway 2 tsp

Cooking method

  • Borodinsky bread (recipe for HP Scarlet Indogo IS-525)
  • 1. Add 4 tablespoons of fermented malt to 100 ml of boiling water.
  • 2. When it has cooled down (20-30 minutes) add 50 ml of water.
  • Loading in this order:
  • 1. Yeast 2 tsp.
  • 2. Water 250 ml.
  • 3. RZ flour 300 gr.
  • 4. Salt 2 tsp
  • 5. PSh flour 270 gr.
  • 6. Honey 2 tbsp.
  • 7. Vegetable oil 2 tablespoons.
  • 8. Brewed malt.
  • 9. Cumin dispenser 1 tsp.
  • We turn on the 13th program (Dough), wait for the end, sprinkle 1 tsp on top. caraway seeds (proofing for another 20-30 minutes) and then turn on "Only baked goods" set the timer for 1 hour and 30 minutes.

The dish is designed for

750 gr.

Cooking program:

a combination of 2 programs or programmable HP

Note

p. 1. Yeast 2 tsp. (try 3 tsp maybe it will be more magnificent).
p. 4. Salt 2 tsp (try 2.5 tsp)
p. 6. Honey 2 tbsp. (can be replaced with molasses, but did not pick up the quantity, or 2 tablespoons of sugar - did not do either.)
I did not do everything in brackets. but I think I should try. And the bread should be a little airier.

I love rye bread with caraway seeds, so I would bake it with pleasure. But only if fermented malt can be replaced with kvass concentrate. Because there is no malt. Can? After all, it only affects the taste, and not the "lift"? ..

You're right. malt is color and flavor, and lifting is sugar and yeast.
There is less malt in kvass concentrate, but it is there.
What's stopping you from playing with the amount of an ingredient?

I bake this bread all the time, as my husband eats only rye. Delicious, always baked. I put the dough on the "Yeast dough" mode, then let it stand for another half an hour and for baking for 1.5 hours. Everything is as in the recipe. I'm a newbie. HP of unknown firm LEBEN appeared 4 days ago. I took the ingredients for the bread strictly according to the recipe, but changed the order of the bookmark a little - the instructions for my HP say that first everything is liquid, then loose. Kneading in the "Dough" mode, waited 30 minutes and baked in the baking mode for 1.5 hours. The bread was baked, it turned out very tasty, though the top fell a little. I will definitely make it again, try it on the "Simple bread" mode and unsubscribe. I will try with a photo.
