Cooking method

  • The terrible story with the making of a loaf began with the fact that Chuchin's husband burst into the house with a joyful exclamation: "Natusya, you butted! Vova said that you will make a loaf for them for the holiday!" A dumb scene))) No, I know how to bake, of course, what is there to hide, but a loaf is an appearance, ornaments, any stucco, to which my hands have not grown. I don't know how to sculpt, with artistic taste too tight. Blinaaaaa. Really butted))). I decided to bake 2 loaves: the first is training, the second is test. Wow, I felt like a practical Michelangelo, albeit with a completely non-Michelangelo result. But it turned out quite well, praise the cookie cutters))).
  • So, we simply dump the ingredients for the dough into the HP and set the main mode for making yeast dough. In any HP it is. This amount of ingredients is simply taken from my pie dough (Pies with cabbage) and converted to 750 grams of flour. The first loaf was more modest - 500 grams of flour.
  • Divide the finished dough into almost 2 equal parts. The smaller one will be the braid, the larger one will be the central ball. We form a ball, pulling the edges of the dough to the center into a knot (this will be the bottom), roll up and put on a baking sheet. We cut the second part of the dough into two more halves if you have a twist (two plaits intertwined) or into three if you have a braid. We roll it evenly into really long bundles (roll better and try to keep the thickness even). Bundles are loose !! we weave it into a braid or a twist and loosely !! we lay around the ball. Cut off the excess braids, pinch the joint. Let there even be a small gap between the ball and the scythe - the product will rise and merge. But if you wind it tightly, it will not be very beautiful. Sprinkle with water from a spray (spread with a brush) and cover with a towel. Let him break up. Sprinkle a couple more times while proofing. The surface must not dry out. Caution - the towel may stick. Better rub it with flour.
  • We have 40 minutes to make jewelry. The dough must be made in advance. better - a few hours before working with him. It will be cured in polyethylene and will become very plastic and non-sticky. Sculpt what you want and how you want, use felling. I warn you right away - cut out of a rolled sheet of dough only after you have lifted it and turned it over. That is, rolled to the required thickness - lift and turn over. The fact. that the dough sticks to the substrate and then bounces back a little. If you cut it out right away, it will "play" in your products: the circles turn into ovals, etc. The dough does not require flour. If only a pinch.
  • Rosettes are made simply: several circles cut from the dough (7-8 pieces) are overlapped by about half in a row. Then they are rolled up and the roll is cut exactly in the middle. It turns out 2 roses with a flat bottom: just put on a loaf. Open the petals. Put all prepared decorations on a plate and cover with plastic wrap. They will calmly wait in the wings.
  • Be sure to think over the composition in advance in order to know how much and what to cut / make. In addition, the decoration attached to the loaf cannot then be torn off without damaging the bread, so the movements should be clear, thoughtful and calm.
  • In the meantime, the loaf has traveled 40 minutes and it can be loaded into an oven preheated to 180g (if convection is 170 degrees). Convection is very suitable here: it browns the bread very evenly. Before planting, I only lubricate with water. There’s a lot of muffins and it’s going to brown We start baking, and we ourselves prepare the ice cream: dilute the yolk with water arbitrarily, about 3 parts of water and 1 part of the yolk.
  • An almost finished loaf (10-15 minutes before the end of baking), when it is already crusty and medium tinted, we take it out of the oven and set it in front of us. We begin to stick the decorations, having previously greased it with a lion. You will have to smear one place several times - it instantly evaporates, because the surface is hot. Decorations adhere immediately to the lioness - be precise in your movements. Side roses, if you have them, I advise you to carefully pierce them in the center with toothpicks and pin them to the crust so that they do not definitely fall in the process. At the very top, I advise you to make only light jewelry, a light openwork salt shaker. because the dough is very fluffy and sags if something heavy is smacked into it. Or "dry" the loaf longer at a lower temperature so that the crust is "oaky". We grease the entire surface of the loaf with a lily and bake over the decorations and again in the oven.
  • Sprinkle the finished loaf with a pulver and wrap it with a towel. After 15 minutes, you can grease with water and sugar for gloss. All. Good luck, go for it.
