Cooking method

  • Thuringian cuisine is varied and famous for its dumplings, grilled sausages and cakes. But vegetables in it are just as well presented as side dishes for game, soups and independent dishes.
  • The proposed recipe is very pleasing in taste and will definitely go into the treasury of my regular dishes. I really liked the taste of the cabbage itself, boiled in the marinade, it did not resemble sauerkraut, but had its own incomparable aroma, sourness and sweetness!
  • Preparing cabbage
  • - Wash the red cabbage, cut the stalk. Boil 1.5 liters of water with 1 tablespoon of water in a large saucepan. l. sugar, with 3 tbsp. l. vinegar and salt. Place the cabbage in the boiling marinade and cook for 15 minutes over medium heat, covered. Then remove from water, separate large leaves, beat off or cut off coarse white fibers a little and cool.

  • - Soften bread in cold water.

  • Mix the crème fraîche with the flour and thicken the sauce with it when finished. (I just poured the sauce, cooled it down a bit and mixed it by eye with the soft Almette cheese - I learned the incomparable color pink sauce with an amazing taste!)

Note

I strongly advise you to boil red cabbage in the marinade suggested in the recipe (wine vinegar, salt and sugar, as well as cloves), this allows you to preserve the color of the cabbage and gives a chic taste.

Since wine and vinegar are different for everyone, then season the sauce in which the cabbage rolls will be stewed to taste.

I cooked this recipe twice (I really liked it). The second time, I replaced the wine and broth with water and wine vinegar, then added salt, sugar and balsamic vinegar. It turned out no worse!
The third head of cabbage is next in line.
