Pumpkin muffin with walnuts

Ingredients

pumpkin 400gr.
sugar 400gr
eggs 4 things.
flour 300gr.
baking powder 2h l.
cinnamon 1h l.
walnuts 100gr.
vegetable oil 175ml
salt 1 / 4h l.
Sauce:
sour cream 150gr.
lemon 1 PC.
orange 1 PC.
vanilla 1 PC.
powdered sugar 3-4 st. l.

Cooking method

  • Cut the pumpkin into slices and chop in a food processor. If not, you can use a hand blender.
  • Once the pumpkin is chopped, add sugar. I usually use brown, but you can also use brown.
  • Then add eggs, salt, flour. Beat everything until smooth.
  • Add baking powder, cinnamon and chunky nuts. Beat for about 5 minutes, until the nuts are combined with the main mass. If you are using a hand blender, then it is better to grind the nuts in a coffee grinder beforehand.
  • After the mass is smooth, while the combine is working, add oil. Moslo can be whatever you like best.
  • Grease the form with butter and lightly sprinkle with flour (I overdid it a little and because of this, stains are visible on the finished baked goods).
  • The form can be filled by 3/4, you can even pour a little less, since the cake will greatly increase in volume.
  • If you do not use the whole dough at once, then the leftovers can be put in the refrigerator for a couple of days, nothing will happen to the dough.
  • Bake in a preheated oven at 180C for 35-40 minutes. It all depends on your oven.
  • You can also bake in the form of muffins, but then reduce the time to 20 minutes.
  • Taking the cake out of the oven, let it stand in the mold for 10 minutes. After removing. Kesk jumps out great.
