Ingredients

Dough:
dry yeast 1.5 g
wheat flour c. from. 100 g
milk 100 g

Cooking method

  • Dough:
  • Mix yeast with flour, add warm milk. Stir until smooth and leave to ferment at room temperature for an hour and a half.
  • Dough:
  • While the dough is ripening, grind the yolks with salt, set aside.
  • Add flour, yeast, milk and yolks, ground with salt, to the dough. Knead for 15 minutes. Fermentation at room temperature - one hour.
  • Extraction:
  • Rinse the raisins, pour boiling water over, leave for 10-15 minutes. Throw on a sieve, dry.
  • Add sugar, softened butter, vegetable oil and flour to the dough. Knead for 10 minutes until a soft, silky, non-sticky dough is obtained. Add raisins. Knead the dough for another 3-5 minutes. Fermentation at room temperature - one hour.
  • Put the finished dough on the table, knead, divide into six equal parts. Form round rolls from each piece.
  • Transfer to a baking tray or baking sheet lined with baking paper. Proofing under the foil for 45-60 minutes.
  • Before sending to the oven, grease the rolls with a mash of yolk and a few drops of milk.
  • Bake in an oven preheated to 230C (convection 210C) degrees with steam for the first 7-8 minutes, then lower the temperature to 190C (convection 170C) degrees and bring the rolls to readiness.
