Cooking method

  • I came up with this cake on the birthday of a virtual friend and I sent it to her in a photo with our first Siberian snow))). This delicious combination of shortbread chocolate cakes, delicate soft cream, orange jelly and chocolate is just bliss ...
  • So, let's begin...
  • Sand cakes
  • Beat the yolks with sugar until froth,
  • add soft butter, sour cream, vanillin and beat again.
  • Sift flour with baking powder and cocoa and knead the dough.
  • Divide the dough into 3-4 equal parts, from which roll out the cakes 5-6 mm thick.
  • Lay the cakes on baking sheets covered with paper or, as I do, roll them out immediately on parchment paper or a silicone mat, so you don't need to transfer anything anywhere, put a plate and cut off the extra edges all smoothly and pretty))
  • Bake in a preheated oven at 180-200 gr. Baking time 10 minutes. Cool the finished cakes.
  • Ice cream: (to be honest, I really wanted to find something new, I dug up several versions of this cream on the Internet and I tried one in this cake, like no one else came up here
  • sour cream, lemon zest (I did without it), eggs, flour, sugar, vanillin, we mix everything well in a steam bath or on a very slow fire (I cooked a frying pan in my mother’s miracle, in which nothing burns right on the fire) cook yes thickening,
  • cool, beat,
  • beat separately 250 gr. oil and mix, the cream is not liquid.
  • Orange jelly:
  • dissolve gelatin separately according to the instructions,
  • squeeze juice from oranges in a convenient way for you,
  • heat the gelatin until dissolved and mix with the juice, if desired and taste, you can add a couple of tablespoons of sugar.
  • For earlier, I would also like to discuss the question: the not yet frozen orange jelly can be divided equally into 2 or 3 parts in advance, depending on how many cakes you have, so that this beautiful interlayer is even
  • Ganache:
  • Place the chopped chocolate in a bowl.
  • Bring the cream to a boil over medium heat.
  • Pour the hot cream over the chocolate and leave for 5 minutes.
  • Using a whisk, dissolve the chocolate in the hot cream in small circular motions starting from the center.
  • Add butter and stir until it is completely absorbed into the chocolate mass.
  • Place a piece of plastic wrap directly on the surface of the Ganache and set aside at room temperature (any chocolate icing can be boiled)
  • Assembling the cake
  • for simplicity, I suggest assembling the cake in a detachable form or in a ring, I was staying with a mommy in the village, she does not have any special forms, I can do without everything, so you can use my assembly method ...
  • Apply cream on the cake,
  • I put some of the cream in a bag, cut out a hole and along the edge of the cake made a sort of "border" so that the jelly layer would not run away anywhere,
  • then carefully pour out the jelly and send the cake to the refrigerator until the jelly layer solidifies (we store the remaining jelly at room temperature so that it remains liquid),
  • take out the cake from the refrigerator on top of the jelly layer, gently apply the cream, on it the cake.
  • We repeat ...cream, border "border", jelly and send the cake to the refrigerator until the jelly layer hardens,
  • Again cream and cake, and on the last cake we put ganache or chocolate icing.
  • I decorated the cake with leftover jelly (since I didn’t share it exactly by eye) and orange zest, and believe me, this zest with which I decorated gave such a not a little piquant note ...)))
