Ingredients

Small bun 2 pcs.
Bismarck herring (fillet) 100-150gr.
Pickled cucumbers 2 pcs.
Leaf salad 2 leaves
Bulb onions 1 PC.
Dill 2 twigs
Mayonnaise 2 tbsp. l.

Cooking method

  • Cut the breakfast rolls in half lengthwise.
  • Brush each half with a thin layer of mayonnaise.
  • Cut the cucumbers into slices and pat dry with a napkin.
  • Remove the herring from the marinade onto a wire shelf or a napkin and drain.
  • On the bottom half of the bun, first put a leaf of lettuce, then a piece of herring, onion rings with cucumber slices. Add a sprig of dill and cover with the top half of the bun.
  • A few tips for cooking herring.
  • You can buy lightly salted fish and soak in the marinade.
  • You can salt the fillet yourself for three to four days, sprinkle it well with salt. After salting, rinse well or soak in tea. Then pour a strong vinegar marinade with the addition of onions, bay leaves, a few peas of black and allspice, a few cloves, a few grains of cardamom, one teaspoon of mustard seeds.

In Germany, a marinade with 14% salt and 7% acetic acid is traditionally used. Slices of herring soaked in a similar marinade are typical for the cuisine of the Scandinavian countries. Bismarck herring is usually served with fried potatoes, or pieces of herring are placed on a bread (bun) like a sandwich (Bismarckbrötchen).
