  • I have been looking for a new sauce for fish in batter for a long time. I wanted it to be versatile and suitable not only for fish, but also for poultry and even game.
  • And it turned out well for our taste!
  • Therefore, in this variant of preparation and serving of fish, two recipes are combined at once - "Fried flounder in batter in German" and Austrian sauce "Orange horseradish".
  • The only unusual nuance that distinguishes this method of frying fish in batter, for me, was the use of ghee when frying. (I, of course, could not resist and fried in a mixture of creamy and vegetable 50/50.
  • In the original recipe, the fish is served simply with shrimp, but I wanted to add a sauce, which I will expose as a separate recipe, because it deserves it!
  • Preparation
  • Rinse the fillet of fresh fish well, squeeze lightly, salt, pepper and pour with lemon juice. Set aside to marinate for 15 minutes, covered with foil.
  • Wash the eggs, pour the contents into a flat bowl and mix well, whisking slightly, with a pinch of salt. Pour enough flour into a separate flat container for deboning the fish.

  • Dry the fish fillet, blotted with a paper towel, roll well in flour, including the sides, then "redeem" in an egg mash and immediately put in a well-heated oil in a non-stick pan.
