Dry red wine from Dornfelder grapes (I replaced dry red wine - 350 ml
Cherry juice 150 ml
Powdered chocolate pudding 250 g
Sugar 90 g
FOR DECORATION
Cream at least 33% fat 500 ml
Powdered sugar 50 g
Pitted cherries 12 pcs
Cinnamon (replaced cocoa)
Vanillin
Gelatin (as needed) + water 10 g + 60 ml

Cooking method

  • Dornfelder is a versatile early ripening grape variety. Crossing was carried out in 1955 in the state educational and experimental center of viticulture and fruit growing (Weinsberg, Germany). Dornfelder produces well-colored, full-bodied wines with fruity aromas and low acidity. This sotr of grapes is named after Immanuel Dornfeld (1796-1869), the founder of the Weinsberg wine school. Dornfeld also wrote the first comprehensive history of winemaking in Swabia.
  • There was no opportunity for me to buy the original wine from Dornfelder grapes. Therefore, I replaced it with dry red wine "Saperavi" TM "Massandra". So, let's cross:
  • 1. Cooking the filling... Stir cold wine and juice from cherries with powdered pudding and simmer over low heat until thickened (or otherwise - according to the instructions on the package; instead of milk / water, use wine). I used dry custard, so I added another 10 grams of cocoa. Add sugar to taste - I got 90 g (moderate sweetness).

  • 2. Cooking the dough... Beat eggs with sugar, vanilla, egg and butter. Add flour and soda. We lay the detachable form with parchment, grease with vegetable oil. We spread the thin bottom and sides of the cake.
  • 3. Put the cherry filling on the dough. We bake for 40-50 minutes at a temperature of 1600C. After baking for 30 minutes, cover the dish with foil and continue baking.

  • 4. The readiness of the cake can be determined as follows: slightly tilt the pan to the side - the filling should not "move". Cool the finished pie right in the mold. The recipe author recommends chilling overnight. I chilled for 3 hours.
  • 5. Whisk the cold cream, add the icing sugar in the middle of the process and continue to beat until stable shapes are obtained. This is my first time using homemade cream. They whipped up in 30 seconds. The powder was mixed by hand - with a whisk - otherwise it would have turned out to be butter. For me it turned out a little fatty, my husband really liked it. If the cake will not be eaten right away, you can add more gelatin (place it with water, boil it a little until it dissolves, cool, stir in whipped cream). Put cream on the surface of the cake, garnish with cherries, sprinkle with cinnamon (I replaced cocoa).

Very original cherry filling - the taste of the wine is clearly audible. The original proportions for the filling were as follows:
Cherries - 350 g
Wine - 750 ml
Pudding - 375 g
Sugar - 200 g
But I decided to lower the concentration of the wine, replacing it partially with cherry juice. I would reduce the amount of cherry layer by 1.5 times - it turns out to be quite concentrated - or increase the volume of cream. But this is a matter of taste for everyone. In general - unusual, tasty!

I have in recipes a cake with a similar cream on wine, but not dark, but on the contrary light - tangerine! The taste is terrible. I always bake it for the New Year - a tradition.
