Bamberg stuffed onions

Ingredients

Large onion 4 things.
Smoked pork 100 g
Minced pork 250 g
Beer dark smoked Rauchbier 250 ml
Eggs 3 pcs.
White bread 2-3 slices
Milk for soaking
Parsley small bundle
Dried marjoram, ground nutmeg by a pinch
Salt pepper taste
Bacon 4 slices
Flour 1 tbsp. l.

Cooking method

  • The city of Bamberg is famous not only for being on the UNESCO lists as a World Cultural Heritage, the Cathedral built in the first half of the 13th century, the Bamberg Horseman and other unique attractions, but also for its bow! The onion variety grown in Bamberg is particularly juicy. According to one version, even the English queen Victoria bought this particular type of onion for sailors setting off on a long sea voyage. This variety remained fresh longer than other varieties and, accordingly, retained its useful properties.
  • This recipe is included in the menu of Franconian cuisine, which, as we know, allows for slightly more different spices than in other German cuisines. My onion is not from Bamberg, and the beer is not smoked, but "Velvet", but the dish turned out to be tasty and beautiful.
  • For the filling, minced pork, smoked meat (I have a brisket, but you can even use meat from smoked ribs), eggs, spices, parsley and bread pre-soaked in milk, grind in a blender. Peel the bulbs, cut off the roots and bottoms and carefully remove the core, leaving a thin outer layer. Fill the received "containers" with the prepared filling

  • And send to bake in the oven in a heat-resistant form with a small amount of water for ~ 180-200about about an hour. At the end, drain the juice, add flour, stirring well, season with salt, pepper, add beer, bring to a boil and serve with this sauce.
