Ingredients

Wheat sourdough 100% moisture active 150 grams
Wheat flour 1 grade 550 grams
pumpkin puree 200 grams
water 150 grams
vegetable oil b / s 1 tbsp. the spoon
dry yeast 2 grams
pumpkin seeds 50 grams
salt 14 grams

Cooking method

  • Sourdough before baking, refresh and let it grow 2-3 times. This takes 4-6 hours.

I take it out on a greased rug, fold it up and set it to ferment in an oiled dish.

To be porous, you need to make the dough with a higher moisture content, about 75%. Remove some of the flour. Then it will not be easy to work with the dough (at least it is so for me).

When I licked my lips at this recipe, the pumpkin was not available, and when it appeared, I already forgot that it needed to be cooked, and ground it all in a meat grinder (in freezing), so the mashed potatoes went raw into the dough. I have never tried sourdough, so I replaced it with instant yeast. I took 500 g of flour, 2 tsp of yeast. "under the knife" (Voronezh yeast). Salt 1 tsp and at the same time I mixed 1 dessert spoon of sugar directly into the pumpkin puree, from which it liquefied a little, otherwise it was very thick, the spoon was already standing. I had only 73 grams of pumpkin seeds, I divided it in half, so that it remained for one more time, I “fried” it slightly in the microwave. Since instead of yeast yeast, the liquid took 200 ml (half water and kefir), vegetable oil 1.5 tbsp. l., well, a little bit of caraway seeds, I really like its note in bread. I kneaded the dough with a manual mixer, baked it in Polaris PPC 0305AD. Here's what happened:
