Ingredients

Fresh spinach 500 g
Raw smoked brisket 70 g
Cooked ham sausage 70 g
Egg 2 pcs.
Onion 1 PC.

Cooking method

  • No need to frown in disgust, we will not cook frogs. There is an assumption that the recipe got its name (and it was almost 1200 years ago) in the city of Bietigheim an der Enz (Bietigheim on the Enz) due to the external resemblance of the dish to frogs, of which there were then a great many. It was first published in the Augsburg cookbook in 1801.
  • The spinach leaves should be washed, cuttings removed and blanched for a couple of minutes, then doused with cold water. Set aside 20 larger pieces.

  • Fry the brisket cut into small cubes in a hot frying pan with finely chopped onions. Add finely chopped sausage and all the greens, which should also be finely chopped - green onions, parsley and spinach.

  • Add eggs and pre-soaked in milk and chopped slices of bread to the pan, salt, pepper, sprinkle with nutmeg, mix everything. Here's what kind of filling we should get:
