Ingredients

Warm water 170 g
Warm milk 170 g
Saf instant yeast 1 tsp
Salt 9-12 g.
Yogurt 70 g
Sugar 1 tbsp. l.
Wheat flour for general use 495 BC

Cooking method

  • To prepare the dough, you only need a mixing container and a spoon.
  • Sift flour into a bowl, add salt, sugar, dry yeast, mix a little.
  • Measure warm water, milk, yogurt into a cup, stir and pour into the flour mixture.
  • Stir with a spoon without fanaticism, just so that everything is connected, you do not need to knead this dough. It should be wet, almost does not hold its shape, but it also does not spread.

  • Transfer the dough to a container greased with vegetable oil. Cover with a lid on top (not tight). Leave at room temperature for 2 hours. This is what the dough looks like immediately after kneading (left) and 2 hours later (right):

  • The dough can be used immediately, but it is better to refrigerate at least overnight. Cold dough is easier to handle and tastes better when you rest in the cool. You can use and store the dough in the refrigerator for 7 days. Also at this stage, you can divide the finished dough into portions, wrap it in bags and freeze it for 3 weeks.

  • And now, from this dough, you can cook flat cakes, pits, pizzas, khachapuri with a filling (in a pan) in any way convenient and familiar to you.

The dish is designed for

for 4 pizzas of 220-225 g each or 7 cakes of 120 g each

Time for preparing:

Dough mixing - 5 minutes, dough ripening - 2 hours at room temperature and about 8 hours in the refrigerator

Note

Simple and quick dough, pleasant taste, convenient to prepare, minimum costs, and no special kneading devices are needed. The dough is in the refrigerator, it is always ready, you can bake it at any time. A lifesaver, especially when there is not enough time.
Recipe from the book "Artisan Pizza and Flatbread in Five Minutes a Day", where it is labeled as a dough for naan (Indian tortillas), but it is suitable for both pizza and pita.

For cakes, preheat the oven to 250 C, it would be nice with a baking stone, but if not, then it will also work on an inverted baking sheet from the oven. I divide the dough into 120 g pieces, round them (when working with the dough, add flour to the work surface) and roll them out slightly. I spread it on baking paper, cover it, let it stand for 20 minutes, and then into the hot oven right on the sheet of paper. The cakes are baked very quickly, 5-7 minutes, sometimes 10 minutes, until browning.
On top of the cakes, you can apply a mixture of dry herbs in olive oil (in the first photo, a section of a similar baking) and bake:

Advice:

When preparing the dough for the first time, I recommend pouring in not all the water at once, but leaving 30-50 ml, stir the dough and see how wet it turns out, compare with the photo of the dough and only then add the remaining water. Flour is different, it absorbs water in different ways, therefore, in order not to get too thin dough and not have to add flour, it is better to "play" with water.

The dough is wet, when working with it, sprinkle the work surface with additional flour, roll the dough pieces in a small amount of flour.

The dough did not stay in the refrigerator for more than 3 days, so I can't say what it will be like in 7 days.

Often, when kneading the dough, I replace a couple of tablespoons of flour with the same amount of bran, there is more benefit, and the result is just as good.

Instead of yogurt, you can use kefir.

The dough can be prepared and with fresh yeast... They will be required 10 g
In this case, first dissolve fresh yeast in warm water or milk, and then pour this mixture into dry ingredients and mix.
