Ingredients

Flour 150 g + for cookie molding
Cottage cheese 125 g
Butter or margarine 100 g
Powdered sugar 110 g
Egg 1 PC
1/2 lemon zest
Almond petals 35 g
Thick jam or preserves 65 g

Cooking method

  • 1. Sift flour, add powdered sugar, softened butter, cottage cheese, yolk, zest (did not add) and knead the dough. Send it to the refrigerator for an hour.

  • 2. Roll out the chilled dough 4-5 mm thick and cut into circles. Make a hole in the middle of half of the circles. I have a large diameter - 7 cm, a small one - 3 cm (it is convenient to take a glass and a plastic bottle cap if nothing is found).
  • 3. Put the circles on a greased and parchment-covered baking sheet, anoint the circles with protein, put the rings on top. Grease the cookies again with protein and sprinkle with almonds.

  • 4. Bake in a preheated oven at 1800From about 20 minutes - until golden brown.
  • 5. Put jam in hot biscuits - this way it is easier to flatten. I used homemade red currant jam (that's why I didn't put in the zest - there is enough acid).

Note

My hands were very itchy to add baking powder (the author of the recipe did not have it) - and still held on. The cookies are very soft and tender due to the cottage cheese and the baking powder was not required for the dough ...
