Weimar Onion Pie (Zwiebelkuchen)

Ingredients

flour (better than 1 grade) 400g-430g
warm milk 280ml
butter or lard 40g
fresh yeast 30g or 10g dry
sugar 1 tbsp. l.
salt 1 tsp

raw smoked brisket (bacon, lard) 150g.
sour cream 15-20% 200g.
eggs 3 pcs
salt, caraway seeds, ground pepper
hard cheese 150g

Cooking method

  • Every year at the beginning of October in the city of Weimar (Thuringia) takes place
  • Weimar onion market (Weimarer Zwiebelmarkt). This has been happening for about 360 years. It is essentially a huge market with over 500 stalls selling anything that has anything to do with the onion, be it sausages, meat cakes with onions, or even drinks. All this is accompanied by a large number of recreational activities throughout the city. But onion pie is a must at this festival. There are a lot of options for this cake. I took one of the oldest and most common options - onion pie on yeast dough with sour cream filling.
  • Knead dough or dough without dough. I do this in HP. I use goose lard. While the dough is coming up, prepare the filling. Cut the bacon into cubes. Peel the onion and cut into thin rings and half rings. Fry the bacon over medium heat with 1 tbsp. l. butter or lard, add cumin and onion and sprinkle with 1 tbsp. l. flour. Simmer under a lid over low heat, stirring occasionally for 15 minutes until the onions are whitened. Season with salt and pepper to taste. Cool the cooked onion to room temperature. In a bowl, combine eggs and sour cream until smooth. Grate cheese on a coarse grater. Combine egg-sour cream, cheese and onion. Stir the filling. On a floured surface, roll out the dough into a rectangle 30x40 cm. Or two circles with a diameter of 25 cm. Transfer to a baking sheet and form small sides. Leave in a warm place for proofing for 10-15 minutes. Put the filling on the dough. Bake in an oven preheated to 200C for 30-40 minutes or until tender. It turns out a very fluffy, airy and aromatic cake.
