  • I learned about acorn "coffee" about 3 years ago. Of course, I myself would not have got out into the forest, but for a child it is entertainment. Ready to row foliage and collect acorns all day. So it turns out that I combine the useful with the pleasant.) And the usefulness in it is a carriage. Acorn coffee does not differ in color or taste from real coffee, and even surpasses it in nutritional value. Doctors strongly recommend such coffee to children, nervous and heart patients as an additional healing food for the body.
  • One of the reasons that acorns have gradually lost their nutritional value lies, apparently, in the fact that they contain the glycoside quercitrin and tannins, which give acorns a certain bitterness. But this bitterness is easily eliminated by heating, and our ancestors probably knew this well.
  • So let's get started. Collect acorns in September-October, until frost. We take large, brown, undamaged acorns. Rinse thoroughly with water.

  • Next, the acorns must be cleaned. It will be difficult to do it right away, although I cleaned for one year without preliminary preparation, but it's hard. Therefore, we spread the acorns on a baking sheet, put in an oven preheated to 200C (medium level) and fry until "cod" appears, literally 10 minutes. You can mix it once. Most of the acorns should open. Even if some did not reveal themselves, it’s not scary. They will be easy to clean anyway.

  • Next, cut each acorn in half with a knife, then again in half and peel it. All black inner spots must be cut out. If the acorns are not very large, then you can leave it that way, if large, then cut it. It is not necessary to grind so that during the subsequent frying the small pieces do not burn. We put the acorns in a drying or oven at 70C and dry until completely dry. I draw your attention to the fact that you need to dry thoroughly. so that mold does not appear in the future.

  • Next, we peel the dried acorns.

  • The next stage is frying. I've tried two options. The first is in a cast iron pan. Fire slightly above average, with constant stirring.

  • The second option is in the oven at maximum temperature. I have 230C + convection, with occasional stirring. The exact time depends on your oven. It took me 15 minutes.

  • I liked the second option more. Grilling is more even, does not burn and does not need to be constantly stirring. The readiness of acorns is determined as follows: it should easily break in the hands. But overcooking should not be allowed. otherwise everything will turn into dust.
  • Next, you need to grind the acorns in a coffee grinder.

  • And brew at the rate of 1 hour. l. in a glass of water. I brewed in two options:
  • 1. Bring to a boil on the stove, boil for 2-3 minutes, leave to stand for 10 minutes. Pictured is the left cup. The color is more saturated. the taste is more "coffee". I liked it more.
  • 2. Pour boiling water over in a French press. Leave on for 10 minutes. Pictured is the right cup. The color is lighter. the taste is softer.
