Cooking method

  • Fruit bread (German Früchtebrot) is a traditional dish of Austrian, Bavarian and Swabian cuisine, which is a sweet bread with a large proportion of dried fruit in the dough. As a rule, fruit bread is baked in the form of small loaves, has a juicy and firm dough, dried fruits and nuts are visible in the cut, often decorated with almonds and cherries.
  • In southern Germany, Austria and South Tyrol, there was a tradition of adding dried pears to the bread baked for Christmas. Depending on the dialect, such pastries were called Hutzeln, Hutzen (Alemannic dialect) or Kletzen (Bavarian-Austrian dialect). With the growth of prosperity and the development of import of southern fruits, prunes, raisins, dried apricots, dates, figs and other dried fruits began to be included in the fruit bread recipe. Sometimes the fruit dough was wrapped with ordinary yeast dough, which made it possible to keep the dried fruit from burning.
  • Prepare fruit on the eve of baking.
  • Coarsely chop apricots, pears, figs, prunes and place in a bowl. Add currants and raisins. Soak the fruit in warm sweetened water and let sit for at least 8 hours.
  • Place the fruit and marinade in a saucepan the next day. Add water. Bring to a boil and cook for approx. 5 minutes. Place the fruit in a sieve and strain the juice. Take one cup of juice, let cool slightly and add yeast.
  • Sift the spice flour onto the work surface. Make a well in the middle and pour the juice and yeast mixture into the well. Knead the dough, add more liquid if necessary. Leave the dough in a covered bowl to rise for 30 minutes.
  • Gradually add nuts and candied fruits and dried fruits to the suitable dough and knead everything well.
  • Form two large or 4 small loaves from the dough. Leave to rise for another hour.
  • Bake in an oven preheated to 180 ° -190 ° for about an hour. You may need to cover the bread at the end of baking to prevent the fruit from burning.
  • Anoint the bread while still warm with fruit juice. To fully develop the aroma of spices, give the bread a couple of days to rest. Bread keeps well in aluminum foil for several weeks. Over time, it will become even more juicy and aromatic.
