Ingredients

butter 150 g
sugar 80 g
almond flour 30 g
flour 250 g
yolk 1 PC.
salt pinch
For filling:
cottage cheese (ricotta or pureed soft) 100 g
sugar 50 g + 50 g
egg 1 PC.
cream 20% 50 ml
corn or potato starch 1 tbsp. l.
vanilla taste
Red Ribes 100 g
meringue:
protein 2 pcs.
sugar 120 g
water 40 ml
currant liqueur 20 ml

Cooking method

  • Johannisbeer - Kaesekuchen mit Merengue (Cheesecake with red currant and meringue)
  • Studying baking recipes in German cuisine, I found many options for pies with cottage cheese and currants. The main thing is with red currants. I suggest a very simple and quick cheesecake.
  • Shortcrust pastry:
  • Combine flour, almond flour and salt.
  • Grind butter with sugar until creamy.
  • Pour flour into butter, add yolk and knead the dough.
  • Refrigerate for 1 hour.
  • Roll out the dough 0.5 cm thick and put in a mold. Chop the bottom with a fork. Put baking paper with a load on top of the dough.
  • Bake at 180 degrees. 10 min.
  • After the end of baking, remove the loaded paper and add the filling.
  • Filling:
  • Dissolve the starch in the cream. Combine cottage cheese, cream, egg, sugar and vanilla.
  • Mix everything well.
  • Place on top of the dough and spread the red currant berries.
  • You can also use frozen currants. Warm it up with sugar, punch with a blender. Place on top of the curd filling.
  • Bake at 180 degrees. 20 minutes. Remove from oven.
  • Meringue:
  • Put sugar and water to boil the syrup.
  • Beat the whites until firm.
  • When the syrup reaches 118 degrees, pour a thin stream into the proteins without turning off the mixer.
  • Add currant liqueur. Beat the meringue until it cools down to 40 degrees.
  • Place on a pie and bake the meringue under a grill or burner.
  • Bon Appetit.
