Cooking method

  • Spätzle is a Swabian and Alemannic variety of pasta. In literal translation "shpetzle" means "sparrow". In fact, these are homemade noodles or dumplings that are made from batter. Spetzle is round - "Knöpfle" and oblong shape "Spatzen". It is used as a side dish for main dishes, as well as, with various additives (cheese, etc.), as an independent separate dish. This is the most popular dish that is ordered in restaurants in Germany. The first written mention of this dish dates back to 1725. Today, the food industry in Germany produces about 40,000 tons of Spetzle annually.
  • Spetzle is an irregularly shaped type of egg pasta with a rough, porous surface that varies in shape between thin and thick, long and short. The only type of pasta that is cooked right during production. Raw dough is squeezed out through perforated plates, or scraped off a special plate into boiling water.
  • Let's get started. The basic recipe consists of flour, eggs, salt, and liquid. As a liquid, the Germans are equally fond of milk and mineral water, sometimes just water, or a combination of both. Sift flour into a bowl, add salt and eggs, gradually pour in liquid. Traditionally, the dough is kneaded with a wooden spoon until it starts to bubble. The consistency of the dough should be the same as thick semolina porridge. It should drain slowly from the spoon without breaking. Add more liquid if necessary. leave the dough alone for 10 minutes. Boil water in a saucepan, add salt.
  • We prepare the spatlet using the selected method:

  • Spatlets are prepared quickly, after surfacing 3-5 minutes. We take out with a slotted spoon / strainer in a colander and rinse with cold water (that is, as well as noodles, although my husband loves unwashed ones). Add butter. This completes the basic recipe.

Anything is added to the dough - cheese, spinach, mushrooms, tomato powder, nuts, various spices, etc. Like our usual noodles, Spetzle can be an independent dish, or it can be served with various sauces, used as a side dish, added to soup, made a casserole, formed cutlets, used in salads. Most often they are eaten with toasted onions and cheese. They are almost always fried a little in oil. Flour is used wheat, whole grain, rye, vegetarians love chickpea, in general, different.
