Cooking method

  • The dish is typical for Westphalian cuisine. This is a stew of beans, carrots, apples and pears with bacon (and not at all with chicken, as one might think). And the humorous name is associated with the expression "And a blind chicken will find a tasty morsel in such a stew"
  • How to cook.
  • Wash the beans, cover with cold water and soak overnight.
  • The next day, pour white beans with water (1.5 liters) and boil until half cooked (total cooking time is an hour). Then put the brisket in the boiled beans. Cook together for half an hour.
  • Add sliced ​​carrots and diced potatoes.
  • Then chopped green beans (or frozen beans) and cook for another 10 minutes.
  • Season with herbs, salt, pepper, wine or vinegar.
  • Wash apples and pears, cut into thick slices and add last.
  • Bring to readiness, but not boil.
  • Remove the bacon from the pan and cut into slices.
  • Put stew, bacon slices and sprinkle with parsley in each plate.
