Wheat Pumpkin Bread

Ingredients

dry yeast 1.25 tsp
wheat flour c. from 370 g
pumpkin puree 250 g
milk 50-80 g
salt 1 tsp
sugar 2 tbsp. l
butter 35 g
vegetable oil (odorless) 15 g

milk, grain mixture for sprinkling optional

Cooking method

  • Peel the fresh pumpkin, cut into small cubes and steam or microwave (in the latter case, drain the excess water, if any). Purée and cool to room temperature.
  • Mix yeast with flour (leave 50 grams of flour from the total amount), add pumpkin puree, salt, sugar and 50 grams of milk. Knead the dough for 7-8 minutes. Leave for autolysis for 15 minutes.
  • Add the remaining flour, softened butter and vegetable oil. Knead a soft, slightly sticky dough. Fermentation in the refrigerator for 10-12 hours.
  • Allow the dough to warm at room temperature for an hour and a half before cutting.
  • Dust the table with flour, lay out the dough, knead, roll out into a layer about 5 mm thick (the width of the layer is equal to the length of the baking dish).
  • Roll up, place seam side down in a baking paper lined dish.
  • Proofing under the foil for about an hour. The dough piece should increase in volume by 2-2.5 times. Before planting in the oven, you can grease the bread with milk (about 2 tablespoons) and sprinkle with a grain mixture (I have flax, sesame and pumpkin seeds).
  • Bake in an oven preheated to 230C (convection 210C) degrees with steam for the first 10 minutes, then drop the temperature to 200C (convection 180C) degrees and bring the bread to readiness. The total baking time for me was 43 minutes.

Note

My pumpkin puree turned out to be very thick. After cooking the pumpkin in the microwave, there was no excess liquid at all. When kneading the dough, 80 grams of milk was required.
