Cooking method

  • While looking for a suitable recipe for cooking shank in German, I learned that it is customary to rub the shank with nitrite salt. But not all recipes require a pre-grated shank, some can be made with a fresh shank. But the most famous: the Rhine and East German - always made of pre-rubbed, nitrite, gepökelte shanks. It is very important when preparing such a gepökelte shank not to add salt to the water during boiling, but on the contrary - add sugar at the end to get a pink "piggy" color. The shank has many regional names, the most common are given in recipes. The recipes themselves differ in the same way. I liked the Rhine and Franconian versions the most. I cooked them.
  • In the Rhine cuisine it is customary to cook the knuckle with a nitrite-treated curing mixture, boiled, with sauerkraut and mashed potatoes or potatoes, its regional name is there Hammchen.
  • In Franconia the knuckle is treated with a nitrite-curing mixture and stewed directly in the cabbage (a very spicy and concentrated broth is obtained). The traditional side dish is horseradish. The regional name for the knuckle in Franconia is Knochla... In both cases, the Steba DD2 handled quickly and easily.
  • Before cooking, the shank should be well rubbed with nitrite salt and marinade (mustard, apple cider vinegar, sugar, crushed juniper berries, garlic) and leave to marinate in the refrigerator for a couple of hours (more is possible). As an admirer of home-made sausages and hams, of course I found nitrite salt. Well, your beer too.
  • Rhine variant. Put the pickled knuckle in a bowl (stainless steel), drain all the juice with the marinade and add a glass (250 ml) of light beer. We set the program "Meat" 0.7 bar 30 minutes (preset time). Then we take out the bowl with the finished shank and install the bowl with a non-stick coating. Take out the shank, coat it with a mixture of mustard and honey (2: 1). We turn on the "Roasting" program and fry the chopped onion with brisket (bacon, lard) for 5 minutes, spread the finished shank and fry it on all sides for 3-5 minutes on each side. We take out the shank and add sauerkraut to the bowl, add 200-250 ml of the shank broth with beer and set "Slowing +" 100 * С 1 hour (or "Vegetables" 0.3 bar 30 minutes). Stir potato starch (2 tablespoons) with a small amount of broth from the shank, stir in cabbage 5 minutes before the end of the program and mix well, add a little sugar, salt and pepper. When serving, put the cabbage on a plate, put the shank on top. The ideal accompaniment to the dish is mashed potatoes with brisket cracklings.
  • Franconian variant: Knochla mit Kraut. This is a very simple, but no less delicious option. For Franconia, boiling sauerkraut in meat broth right along with the shank is characteristic. One bowl is enough here. First, cook the slightly brushed shank in beer (200 ml) on the Meat program 0.7 bar for 20 minutes. Next, put onion, cabbage, potatoes and apples fried with brisket (bacon, lard) until golden brown in a bowl to the shank. We expose the program "Simmering +" 100 * С 1 hour (or "Vegetables" 0.3 bar 30 minutes).Serve with a typical Franconian attribute - horseradish.
  • Serve beer with a knuckle in German (dark is better).

I also found a shank recipe and there it is aged for three days in a salt solution with saltpeter. I also thought that in the absence of saltpeter, you can use nitrite. But hands have not yet reached. But there is a slightly different recipe. Maybe I'll ripen and do it.
