Ingredients

Marinade:
Olive oil 4-5 st. l.
Lemon juice 1 tbsp. l.
Chop the garlic. 2-3 teeth
Greens (dill, parsley, thyme, rosemary) small bundle
Ground black pepper, salt taste

Cooking method

  • Steckerl means a small stick in translation. Steckerlfisch - accordingly, fish baked on coals on this stick. This dish was first offered by a Munich merchant to trade fair visitors as a beer snack in 1902, and since then this fish has been a must-have traditional dish at every Oktoberfest. Then, when there were problems with transportation, only freshwater fish from local rivers and lakes was baked, but nowadays, small whitefish, trout, mackerel, and herring are equally popular.
  • For the recipe I used a large vendace, which is also from the whitefish genus, and we sometimes call it "Pereslavskaya herring".
  • The fish, without cutting off the head, must be carefully gutted and marinated in a mixture of ingredients for the marinade for 1-2 hours.

  • Now a wooden stick or skewer is inserted along the fish, and the fish is baked. Originally - on coals, and I used a small homemade grill and baked the fish in a hot oven at 275about within 20 minutes.
