Walnut cakes with apples and custard

Ingredients

Dough:
chicken eggs 2 pcs
granulated sugar 75 g
wheat flour c. from 100 g
butter 100 g
nuts (almonds or hazelnuts) 50 g
baking powder 1 tsp
Custard:
yolk 1 PC
protein 1 PC
milk 220 g
corn starch 20 g
granulated sugar 30 g
vanilla on the tip of a knife

apples (small) 2 pcs
granulated sugar 2 tbsp. l

Cooking method

  • Custard:
  • Beat the yolk with sugar, starch and fifty grams of milk. Bring the remaining milk to a boil with the vanilla.
  • Pour half of the hot milk into the yolk mixture, stir. Pour into a saucepan to the remaining milk, return to the fire and, stirring constantly, bring the cream until thickened.
  • Cover the cream with a film so that it touches its surface, cool.
  • Beat the whites into a stable foam and gently add to the cooled cream.
  • Dough:
  • Melt the butter and cool to room temperature.
  • Grind the nuts (I had almonds) in a coffee grinder.
  • Beat the eggs with granulated sugar into a white fluffy mass. Continuing to beat, add melted butter.
  • Add flour, mixed and sifted with baking powder, chopped nuts. Mix.
  • Cut the apples into quarters, core and cut into slices 2-3 mm thick.
  • Grease a 20x20 cm pan with butter, line with baking paper.
  • Lay out the dough, flatten. Place the custard on top of the dough. Put the apple slices, slightly sinking them in the cream, sprinkle with granulated sugar.
  • Bake in an oven preheated to 180C (convection 160C) degrees 45-50 minutes.
  • Cool completely, cut into portioned squares (I got 9 pieces) and serve with a cup of tea or coffee.
