Good day! With the light hand of our Forum, I bought for my family a wonderful Regina Marcato pasta machine made in Italy. I was hatching the idea of buying for a very long time, about two years. There is not much information about it, so the idea arose to share with you about the capabilities of this machine in this topic. I urge everyone who has such a machine to join in the discussion of all the delights of making pasta in it.

This is how it looks:

I immediately bought a mechanism for kneading dough for this machine:

Cooking in the machine is easy, even though it is completely manual! The main thing is to find a convenient place to screw it on and turn the handle without interference!
The whole process of making the dough in the machine takes no more than 7 minutes - it's not long. In it, you can easily prepare the classic dough (flour + egg + butter + salt) for pasta on 4 C0 eggs. there are two holes for the handle - this is to make it easier to knead the dough: first, knead the dough by inserting the handle into the first upper hole, and when we mix in a rather tight mass, then using the lower hole. Thus, in addition to pleasant thoughts about the future of eating homemade pasta, we make (pump) our handles beautiful. The dough turns out to be cool.

Before we start cooking the pasta, we will prepare the dough, that is, we will cut it into small pieces and roll them in flour for better passage through the holes.

Here are my first samples:

Curd dough for "lazy dumplings" (1 pack of cottage cheese 180 gr + 1 C0 egg + whisper salt + sugar to taste + premium flour). I don't remember the total weight of the flour, but the total weight of the dough turns out to be 516 grams. The dough is steep, does not stick to your hands.

Mar_k
shade, Thank you!

I bought it here at our Flea market, I could not resist !!! For the entire set I gave 5 thousand rubles. It is also sold in online stores. You can also buy it separately: The pasta machine is sold separately from the dough roller. At the same time, the dough can be kneaded in HP or by hand.
Rada-dms
Marina, thank you !!!!!!!!!!!!
Now questions about the process !!
We tried to make pasta and other types. The dough was kneaded without any problems, and then I rolled noodles out of it on Marcato. But it was not possible to push pasta. They began to twist, so the auger got so hot, they were afraid that it would catch fire! They huddled in the holes! We made another dough - the same thing!
What did you do wrong?
Mar_k
Rada-dms, I thought about your question and that's what came up: the dough is very steep, or the mechanism was skewed during assembly, that is, it did not evenly go into the groove and this interfered with normal operation! And yet, I sprinkled the dough with flour when I laid it to form the pasta, because I didn't succeed the first time, it did not move well without flour ?!

Rada-dms
Mar_k, that's how I will hand it over to my husband, let him figure it out!
I think that it was assembled correctly, the techies have checked everything for sure, a hundred times! But about sprinkling with flour - let's try. I'll change the dough too. Unsubscribe!
Mar_k
Rada-dms, agreed !!! We are waiting for the results !!!
Maybe the owners will catch up (I know for sure that there are such) and tell you how and what !!!!

Machine for pasta, pasta Gastrorag QKX-1 tell me, what's the difference? Here the price is 1290 rubles.5 nozzles and yours is more expensive and can there be more nozzles? maybe there is no shaft for kneading the dough?
Mar_k
prubulwhat can I say! Initially I was looking for Regin. Although on the Internet, as I looked, there are many analogues, and the price is from 1400 and above, and the manufacturer is Taiwan and China .. This is the same as Lapsherezek. I can’t judge the quality of these machines, I don’t know what they are capable of. And according to the description they are like "twins". Yes, the most interesting thing is that on some sites selling Analogs, Regina is displayed in the picture and videos about the possibilities of Italian women are used on the video!

Mar_k
shade, well no !!! This is the one on our site !!!
Lanko
Mar_k, Marina, what have you tried the minimum portion purely for kneading? According to instructions like 350g. flour, 3 eggs ... Can you mix less or not?
Mar_k
Lanko, didn’t make the minimum portion! I am more to the maximum!
And so I think, you can take not a C0 or a village egg, but C1 or C2, and, accordingly, pour less flour !!! And so I think that it will knead a large egg for 1 egg !!! There, the distance from the roller to the bottom is not very large! On occasion I will definitely try !!!
Lanko
I report 200g. flour, 2 eggs seemed to me not enough, it was spread along the blades, I had to stir it with my hands. Or simply did not have enough patience ... But the plump horns from this rather tight dough wound up without problems.
Mar_k
Lanko, it's great that in the end the horns turned out !!!
But in fact there was not enough patience! The dough in the machine is pretty cool you can do! At first I twist its first hole for the handle, and when it starts to crumble or the handle is already spinning tightly, then I go to the lowest hole for the handle! And already there the dough gathers and becomes the required density. And so periodically I rearrange the handle!

Yesterday I made dough with carrots and also with beets (mashed potatoes). The first turned out very quickly, but when I did the second, I had to add flour, the dough turned out to be crusty, but the spaghetti spun very well!
I'll post the pictures a little later!
Lanko
Mar_kI didn’t worry about the steep dough, the machine for pasta was what interested me exactly in the minimum load. I didn't want to collect the dough into a lump. Seven minutes on a fast spin, so only crumbs were poured over the blades. I had to sculpt a lump with my hands. And now I think, maybe I still had to twist it ...
Mar_k
Lanko, yes, when it breaks into a crumb, you have to turn it a little longer (sometimes even more than 7 minutes) and rearrange the handle. I'll mix it on the top, and I'm already mixing it on the bottom !!! You should try on the minimum amount. I did yesterday for 2 eggs + 100 g mashed potatoes - 600 g dough yield.
Lanko
Well, that means I just didn't twist it, hurry ... I didn't have enough patience to hold and twist. I don’t have such a table to attach and twist. Next time I'll try to fit Regina onto a folding workbench.
And about the dough with mashed potatoes, in detail, for very, very beginners?
Mar_k
Lanko, I will definitely post it, I'll post it a little later!
Lanko
Marina, have you tried the choux pastry? And then it is interesting how the reginka reacts to boiling water, but it's scary to try. So I decided to ask if there is such an experience ...
Mar_k
Svetlana, I haven't thought about it !!! Well, you need to turn the handle so that no lumps form ?!
The other day I made beetroot and carrot macaros. I added boiled and finely grated carrots and beets to the dough. I added a little vinegar to the water to preserve the color !!! They turned out to be funny and tasty!
Lanko
Marina, thank you anyway, without you (you?) I wouldn't have a reginka. I just wanted to try some custard, and the reginka weaned me off from kneading tightly with my hands
Mar_k
Lanko, I tried to do it in Blender. Here is how https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=357201.0.
Lanko
So far, there is no such thing even in Wishlist ... Yes, and I want custard dumplings and dumplings, for them I use reginka and mainly use it (as a kneader). Here she drives, and I'm afraid the blender will not pull.
Mar_k
I make such a dough in a bread maker, so I didn't even think about making it in Regina.
Mar_k
The other day I made delicious spaghetti pasta! Since children do not like separately carrots with beets, here's how I came up with feeding them! Fun and useful !!!
I steamed the beets and carrots, grated them on a very fine grater and added to the dough! This is how it was:

Lanko
Yeah, it's already clearer ... Add grated ready-made beets or carrots to the usual dough ... How many mashed potatoes are in spoons for a bookmark for 3 eggs? Well, I will never grow to intuitive (by eye) proportions. I torment you with questions ...
Mar_k
Lanko, I wrote under the pictures !!!
Lanko
"What the doctor ordered"
oh, how much empty space I got out, I'm trying to remove ...
Vinokurova
I made custard in the region ... and nothing ... at first I poured everything dry, butter, and then boiled water ... everything mixed great ...
Mar_k
Vinokurova, great! What is the ratio of products? How many grams (glasses) of what?
Vinokurova
Marina, https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=3263.0
about the same proportions ... the dough turned out good ... I left it sweat a little in the region ...
Mar_k
Understood what, for chebureks !!! And I thought for profiteroles
Vinokurova
I'm already in it and knead the butter ... I'm very pleased ... try it!
Mar_k
Vinokurova, Thank you! I will definitely try!

Bliiiiiiin, I bought myself this car in the hope of making yeast-free dough so that the handles were clean, I saw enough videos on the Internet. As a result, the car arrived, but there was no dough attachment. It turns out you need to buy it separately. I don’t know whether to sell my own machine, or buy a dough attachment. If you buy in addition, then where are they sold. Something crawled and did not find it. Or was looking in the wrong place. Maybe someone played enough and will sell?
Or maybe who needs a new machine without a dough mixer in the package?
julia_bb
What kind of dough attachment do you need? More bells and whistles to this machine? Or do you need rolling?
Larssevsk
This machine itself just makes pasta. It comes with different nozzles for macaroons of different shapes. And there is also a gadget to knead the dough. You can buy it.

Ahhh, well, you can de want to knead the dough, I'll go and read what's what)
Vinokurova
Larssevsk, Larissa, isn't there a mixer included?
Fotina
Laris, how much does it cost?
Mar_k
The stirrer is usually sold separately! When I was looking, I saw a lot of them! I like the machine !!! Sometimes I dabble!
Larssevsk
Stirrer not included. The girls and I from work watched the video on YouTube - there is such a kick-ass mixer + nozzles for macaros of various shapes, so we all fell for it. I took more because of the mixer, but it turns out I still need to buy it, and this was no longer part of my plans. I think, whoever has a kneader, it is quite a cool toy for pasta. I sell for 2000 rubles in the "flea market" section. There are already two girls thinking. But I probably have one more girl to sell from work, so if anyone is interested, write in a personal.

Girls! Tell me, frankly, you need to buy such a machine - an electric pasta or more lies in the corner. I have a manual rolling noodle cutter, somehow I didn't make friends, I make it by hand, but I love my noodles. On March 29, we will have two electric machines in our store for making pasta, horns, spaghetti:
1) Fairy KM-180
2) VITALEX VL-5370
So I am faced with a choice, call-buy or is it not worth it?
And who used these models, what is positive and what negative can you say about them. If you take, which one?
Thanks to everyone who responds.
chistotel
Good day ! I bought the Fairy KM-180.Today I master it. And now I have one question. How do you manage to cut off the noodles, horns, etc., spread, cut again. Yes, the two of us with my daughter do not have time. We have to stop the device, lay out several slices and turn it on again. I have one version. Fairy has a power of 180 W, maybe too powerful, I looked, others have 80 W? And I liked the "toy" so much, although it is a hurry.
zzoloto
Larssevsk, tell me, please, where did you buy marcato Regina?
dorinna
So, it happened, my Reginka arrived. Here she is, my beauty:
Pasta maker Regina Marcato
Such a baby, but very pretty. I bought a dough mixing attachment here in Moscow.
First experience of communicating with her:
I kneaded the dough - green for 400 g of flour, and white for 500 g. Regina, in principle, coped with 500g, but with difficulty, probably, more than 450g for one batch should not be taken, but 400g is better.
Pasta maker Regina Marcato Pasta maker Regina Marcato
You need to knead for 5-7 minutes. When I poured 500 g of flour, and even the dough was steep, my hand got tired, and the green one was 400 g softer - in general, it mixed with a bang. Of course, it would be better if the motor kneaded, but in general it is quite normal. First, I inserted the handle into the upper slot, then, when it became more difficult to twist, I moved it to the lower one. The dough turned out good, however, it lay in the refrigerator for more than a day, I could not allocate a couple of hours of time. And here's the bottom line:

Pasta maker Regina Marcato Pasta maker Regina Marcato Pasta maker Regina Marcato Pasta maker Regina Marcato Pasta maker Regina Marcato Pasta maker Regina Marcato

On the last photo, medium-sized pasta, for comparison, I put a couple of large green ones.

Everything is good in principle, but:
in the process of squeezing out macaros, the handle turns hard, with effort, therefore, you need to think over which table to screw this machine to. And another nuance: the table should not be with a rounded corner, it must be with a right angle. The machine is attached precisely at an angle, since the socket for the clamp is located on one side, and the socket for the handle is on the other.
