Ingredients

Flour 2.5 cups
Ayran 1 glass and 2 tbsp
Greens (dill, parsley, cilantro) Only 2 bundles
Filling salt 1/3 h l
Pickled cheese, slightly salted 120 g
Butter for lubrication

Cooking method

  • We have a wonderful recipe for kutabs on our website. Olga's MariV, but I decided to share my recipe that I learned in the North Caucasus. This dough is made on ayrvn. We sell ayran in Kazakhstan. If there is no ayran, then I take 2/3 kefir, 1/3 water and a quarter teaspoon of salt. If the dough is on ayran, then there is no need to salt. This is the only dough I make without using a technique. The secret is how it is kneaded. So, we take flour and sift it into a bowl, slowly begin to pour out ayran and stir with a fork. When half the ayran has been poured, you need to mix the flour well with a fork. Then pour out the rest of the ayran. Now work for our pens. Knead the dough right in a bowl. If there is not enough flour (depending on air humidity and flour), then add. The consistency of the dough is slightly softer than dumplings. Well, now - a secret: knead the dough on the working surface, at the same time stretch it into a flat sausage:

  • Knead-stretch again and repeat this operation until the dough is smooth. Usually 9-10 times. Divide by 12 and round.

  • Let's cut the greens, add salt. If the cheese is salty, then do not put salt.
