Ingredients

Zucchini 1 PC.
Carrot or celery stalk 1 PC.
Potatoes 2 pcs.
Leek white part (onion) 2 pcs. (1 pcs.)
Green beans 200 g
A tomato 1 PC.
Canned white beans 1 can
Parsley bunch
Olive oil 2 tbsp. l
Salt, allspice. taste
Pesto sauce 4 tbsp. l
Grilled sausages fresh 2 medium
Water 1.5 L-2 L
Parmesan or pecorino cheese 2 tbsp. l

Cooking method

  • I read the recipe in an Italian magazine, I wanted to try the addition - pesto sauce. I added low-fat sausages on my own to make it more satisfying. Moreover, the Italians add such sausages.

  • - Peel potatoes, cut into small cubes and soak in cold water
  • - Wash the green beans, cut off the ends, cut into 3 cm pieces.
  • - Onions (preferably leeks), chop the carrots into cubes and start sautéing in two tbsp. tablespoons of olive oil.
  • - Dice the tomato, zucchini, chopped celery stalk, add to the pan with onions and carrots and continue to brown for 3 minutes, stirring occasionally. Add the grilled sausages, cut into pieces.

  • - Place the washed potatoes in a saucepan, add the green beans and cover with boiling water. Boil the potatoes and carrots until tender for 10-15 minutes.
  • - At the end add canned beans from a jar of liquid, bring to a boil. Salt. Throw in a few allspice peas. Skim off the foam.
  • - Add a fine paste with a fast cooking time (I have 2 minutes), cook and at the end add chopped parsley.

And without the pesto, it's a great soup!
If there is no fine pasta, then it is better to cook the pasta separately and then add to the plates. (That's how I like it.)

Hippolyte, You're right!!!!!! But only ready-made pesto is not always successful !!! Then I tried something cheap, so I didn't even add it to the soup :) And I went well without pesto - delicious sausages saved a little smoked!
