Lecho without vinegar

Ingredients

peeled pepper 2 Kg
tomatoes 2 Kg
carrot 2 pcs
sugar 1 stack
vegetable oil 1/2 stack
salt 2 tbsp without top

Cooking method

  • I offer a simple recipe for Lecho and most importantly without vinegar.
  • Peel and chop the pepper. Scroll the tomatoes through a meat grinder or chop in a blender. Grate the carrots on a coarse grater.
  • Tomatoes, sugar, vegetable oil, salt, cook until boiling for 20 minutes.
  • Then add pepper, carrots and cook for another 20 minutes. This time I added 1 hot pepper.
  • Pour hot lecho into sterilized jars, roll up and turn over until cool. That's all!
  • Lecho turns out to be very tasty, perfectly stored at room temperature.
  • I have been using this recipe for a very long time and it has never let me down.

It seems to me that after 10 minutes it will already be possible to check for readiness, take into account the fact that the pepper will still "reach" in hot sauce in a jar. Yes, and it seems to me that carrots need to be cooked longer than peppers, I would have thrown them to cook a little earlier than pepper.

ABOUT! I found my old recipe, which had also been tested over the years. And I don't have vinegar there either!
1.3 bell peppers
1 kg of tomatoes,
250 onions,
15-20 g of salt
A pinch of ground black pepper
2-3 st. spoons of water.

But there is no butter, but I somehow made it tastier for me with butter. This recipe says 10 minutes is enough! And then sterilize in jars in water, liter 45 minutes, three liter 60 minutes. But I never did three liters :))))))

Because there, according to the recipe, tomatoes are not scrolled, but they are also put in slices, that's what would not have burnt at first, apparently. But I myself like it more when there is pepper in the tomato. And that recipe is from an old book. "Let's preserve ourselves", for those years I had no other. And the most liked the Bulgarian lecho in stores. Who remembers that?
