Vegetable preparation (multicooker-pressure cooker Steba DD1)

Ingredients

turnip onion 1 kg
Sweet pepper 1.5KG
tomatoes 3 Kg
bitter pepper 2 pcs
salt, sugar, ground pepper
fresh herbs and garlic
vegetable oil 4-5 st. l.
lemon acid 1/2 tsp

Cooking method

  • Chop vegetables at random. Put all the ingredients in a bowl, except for herbs and garlic, mix, leave for 15 minutes to let juice. Vegetable setting 0.7 (high pressure) 4 minutes. After the temperature drops below 98 * C, release the pressure, add herbs with garlic, stir, cover and leave for 5 minutes. Arrange vegetables in prepared jars, close or roll up. Since vegetables are not overcooked, they can be used for making soup, for pasta, for rice, as an independent side dish with the necessary additions, adding at the beginning or middle of the recipe.

VikaVikus, this is really a lifesaver throughout the year. Without bothering, I open the can and add it somewhere. So, I boiled the macaroshki, threw the blank into the stewpan, warmed it up a little, added all sorts of spices, threw it there for 5 minutes, and held it for a delicious dinner in Italian style. I'm not talking about soups, borscht and so on (lentils are just a fairy tale with this!). And if you add tomato paste and spices, again to the pressure cooker for 3-4 minutes, then an excellent lecho or sauce.

It turns out two different products. Maybe you can find recipes specifically for green tomatoes? But this is my opinion, and you decide.

Veronica, I sterilize the cans before they are laid out: I pour about 1 cm of water into well-washed cans, cover them with washed lids and put 4 pieces in the microwave, 4 minutes at full power - everything is sterile. And after laying out the vegetables, I no longer sterilize. Everything was always fine. And then, all the same, the vegetables will be heat-treated after opening.

Who is afraid, the preservative "dr Etker" is sold, you add it to the vegetables according to the instructions (from my point of view, a specialist, the dose in the instructions is greatly overestimated, you can safely reduce it by 10 times) and nothing will ever happen.
