why should they (tomatoes) be cooked for so long? more than an hour.

CatNatWhen I cooked tomatoes on the stove, the process of evaporation of the liquid took four hours. The pressure cooker cooks 1: 3 in time. That's why I set the time. Of course, all the water remained in the pressure cooker along with the tomatoes, but it turned out like tomatoes in clear water (juice). Strain the water through a colander, and only tomato gusha will remain, without water. Thus, adjika comes out cool.

Thanks for the clarification, Tatiana. Since the pressure cooker does not evaporate water, I think you can set the time even much less. Maybe even try for 5-10 minutes on vegetables, and then drain the water. But that's so thinking out loud

Natasha, may be.
A neighbor (asetin) taught me to boil tomatoes for adjika. From the initial volume, 1/3 of the tomato thick should remain.
I cut the tomato into a full bowl, and the adjika turned out to be a liter jar. I do not know if the water will have time to separate from the tomato in a short time. Of course you can try on the trail. times, and if it does not come out add time
