Grandma's borsch dressing

Ingredients

Beet 3 Kg
Carrot 2 Kg
A tomato 6 kg
Vegetable oil 1 l
Salt 1 tablespoon
Spice taste
Bulb onions (optional) 1 kg
Bulgarian pepper (according to availability) 1 kg

Cooking method

  • Peel and wash vegetables. Grate on a coarse grater (I rub in a food processor) carrots and beets. Grandma and Mom add finely chopped onions, but I don't. I love freshly fried onions in frying. Alternatively, add 1 kg of finely chopped onions.
  • Scroll the tomatoes through a meat grinder.
  • Pour vegetable oil into a saucepan, bring to a boil and add beets and carrots.
  • Simmer vegetables until soft, stirring occasionally, avoiding sticking.
  • Grandma's borsch dressing
  • When the vegetables are well passaged, you can add 1 kg of peeled and chopped bell peppers and 1 kg of finely chopped onions. It will be tastier and more aromatic. I have problems with pepper this year. Therefore, I closed without him.
  • Pour over tomato and bring to a boil.
  • Season with salt and, if desired, add your favorite spices. I add Provencal herbs.
  • Simmer for 1 hour over low heat to simmer, stirring occasionally. At the end, I add 100 ml of vegetable oil to the dressing, but this is not necessary.

  • Pour into sterilized jars, pour a spoonful of vegetable oil on top and roll up.

  • The amount of dressing directly depends on the juiciness of the vegetables. Sometimes it turns out only 7 liters, when the year is dry, and sometimes 12 liters, like this year, a year with rains.
  • I usually close it in parts, but a lot.
