Ingredients

The foundation:
butter 100 g
wheat flour 100 g
almond 50 g
cocoa powder 20 g
yolks 2 pcs
granulated sugar 60 g
baking powder 0.5 tsp
ice water 1.5-2 tbsp. l
Filling:
cream 33-35% 300 g
granulated sugar 50 g
chocolate 70-75% 250 g

Cooking method

  • Grind almonds in a coffee grinder together with granulated sugar.
  • Mix flour with cocoa powder and baking powder, sift.
  • In a blender bowl, combine pieces of cold butter, flour mixture, chopped almonds, yolks and ice water. Punch with knives in "pulse" mode, then quickly knead the dough.
  • Brush a springform baking dish (26 cm) with a little butter. Lay out the dough and distribute it according to the shape, forming the bottom of the cake and small sides, two centimeters high.
  • Bake in an oven preheated to 180C degrees for 15-20 minutes. The finished cake base should spring back when pressed, the toothpick should remain dry. Cool in shape.
  • For the filling, bring the cream to a boil with the granulated sugar. Remove from heat, add chocolate pieces, stir. Cool to room temperature.
  • Put the filling on the base, flatten. Put the tart in the refrigerator for at least three hours.
  • Sprinkle the tart with cocoa powder or powdered sugar before serving.
