Cinnamon rolls (Piter Reinhart)

Ingredients

Dough:
fresh (or dry) yeast 15 g (2 tsp)
wheat flour c. from 460 g (+ 50g)
milk (or yogurt) 250g (280g)
granulated sugar 90 g
salt 1 tsp
butter (or margarine) 80 g
egg 1 PC
lemon zest 1 tsp
Filling:
granulated sugar 100 g
ground cinnamon 10 g
Glaze:
powdered sugar 125 g
milk 1.5-2 tbsp. l
lemon or orange extract 0.5 tsp

Cooking method

Dough:
Yeast, if fresh - grind with your fingertips and mix with 400 g of flour, dry (took saf-moment) just mix with flour, add salt, sugar, an egg at room temperature and warm milk. Knead for 6-7 minutes, stop kneading and leave the dough for autolysis for 15 minutes.

Add softened butter, remaining flour and resume dough. You may need a little more flour. I added another 50 g of flour during kneading to get a very soft, slightly sticky dough (the dough should not be smeared under the mixer).

Fermentation - 120 minutes with one workout.

Lightly grease the work surface with vegetable oil. Lay out the dough, knead and roll into a layer 35x30 cm, about one centimeter thick.

For the filling, mix sugar (I took brown) with cinnamon, sprinkle the surface of the dough and wrap it in a roll (on the short side).

Lay the roll seam down and cut into 8-10 equal parts.

Cover a baking sheet with baking paper, put the dough pieces at a considerable distance from each other. Proofing for 45-90 minutes at room temperature under a film. The dough pieces should almost double in size.

Preheat the oven to 175C degrees. Bake the rolls for about half an hour in the middle of the oven.

Cool the finished rolls on a baking sheet for 10 minutes, then cover with glaze.

Glaze:
Sift the icing sugar into a bowl, add warm milk and lemon extract (not added), beat quickly. Transfer the frosting to a plastic bag, cut off a small corner and apply the frosting to the warm rolls.
