Siberian dumplings

Ingredients

Dough * (my version):
Kefir 250 g
Wheat flour 375 g
Salt 1 \ 2h. l.
For minced meat:
Beef 200 g
Pork 200 g
Bulb onions 1 PC.
Salt pepper taste
Ice 20 g
For cooking
Bay leaf 1 PC.
Vinegar 1 \ 2st. l.
Black peppercorns 5 pieces.
Salt taste
Water 1 l

Cooking method

  • Prepare minced meat in advance (a day). To do this, pass the meat and onions through a meat grinder. salt and pepper. mix, put in a container, close and put in the refrigerator.
  • Before cooking, add crushed ice (ice water) to the minced meat and beat off.
  • Prepare the dough. To do this, combine all the ingredients and knead a hard dough. Collect the dough in a ball, put in a bag and refrigerate for at least an hour.
  • Then roll out the dough on a table sprinkled with flour. Cut out circles with a diameter of 4-5cm. Put the minced meat in the middle, close up the edges. Freeze dumplings immediately after cooking. i.e. 10-15 pieces of stuck. put it in the freezer. Then another 10-15 pieces were removed, etc.
  • I make on a tapper dumpling machine. I put the minced meat with a pastry syringe (in the photo minced chicken from another recipe).
  • Siberian dumplings
  • Before cooking, remove the dumplings from the freezer, leave on the table for 5 minutes.
  • Boil water together with vinegar, bay leaf, pepper, salt.
  • Boil dumplings until cooked. Serve with sour cream.

  • DELICIOUS!!! And with a dough sheeter and a meat grinder, you can make dumplings even every day!
