Khachapuri Light

Ingredients

Flour 450 g
Kefir 250 ml
Salt 1 tsp
Baking powder 1/2 tsp
Cheese salted 300 g

Cooking method

  • There are a lot of khachapuri recipes. On our forum too. However, I decided to share a family recipe. I have been pan-frying for many years, and today I decided to use the Midea grill. Light not only because it is easy to make, but also because it is practically a dietary meal and a minimum set of products is required.
  • Khachapuri Light
  • So, mix flour, salt, baking powder and kefir without fanaticism in a bowl. The dough will be very soft.

  • Divide the grated cheese into three parts. Divide the dough into thirds with a spoon right in a bowl. Put one part on the surface dusted with flour.

  • Smooth out with your hand in the form of a small cake, put a third of the feta cheese in the middle.

  • Shape into a ball by collecting the edges of the dough in the middle.

  • Flatten slightly with your palm.

  • Reheat the Midea grill on the Pie program. Drop vegetable oil on the bottom plate. Place khachapuri, drip vegetable oil and close the lid. Don't worry about the thickness of the khachapuri. The grill cover will decrease thickness and increase size.

  • Literally in 15 minutes your three khachapuri exude a divine aroma.

  • You can put a piece of butter on top. Serve with vegetables and herbs.

Since I did not know the temperature (Tan, I saw your post much later), I decided to bake at 200C. I did not fix the grill lid, but simply put it on the cake. The khachapurka, of course, flattened out and feta cheese came out of it ... in different directions. It turned out to be a wonderful relief and a super-duper crust, but ... the dough is not that it is not baked, but the impression is that it would have finished a little more. This is how the first khachapurina turned out:

The second was baked already at 190C and I fixed the grill lid so that it did not lie on the cake, but just slightly touched it. But again, when the cake swelled, the feta cheese crawled out. But the cake was baked better:

For the third cake, I installed the lid so that it did not touch the dough at all, but was 5mm higher. Khachapurina got up very well, became so plump, plump, but as soon as she reached the lid herself ... the cheese, the infection, again rushed out! What are you going to do!

Summary: Don't get your contact grill dirty! But if you really want to, you can bake at 190C and fix the lid so that it does not touch the dough. The dough itself will reach it and there will be pretty stripes. But personally, next time I will simply bake in a pan. If I had immediately done the way Tanya once did - in a frying pan - without chasing the dubious beauty of the relief, now I would be absolutely happy. Because I really liked this recipe! And there would be much less fuss.
