Nasturtium Snack Butter

Ingredients

Butter 82% 50 g
Leaves and flowers of nasturtium 1/3 Art.

Cooking method

  • We have a weakness in our family - these are oils flavored with natural ingredients. And if vegetable oils, infused with herbs and spices, appear more and more often on many tables, then butter with fillings is quite rare!
  • Take advantage of the summer season and make nasturtium oil - a great healthy, tasty and aromatic plant! After all, nasturtium or Capuchin watercress in most European countries is used not as an ornamental plant, but as a vegetable. It is used in salads, sauces, vegetable purees, and its green fruits are pickled and used instead of capers.
  • This oil can be used alone on toast to decorate dishes. But especially it sounds with steamed or baked fish, fish soufflé or steamed cutlets.
  • Green leaves and orange, yellow flowers of nasturtium have a pleasant slightly peppery taste and an extraordinary attractive aroma!
  • It literally takes five minutes to prepare the oil, and the blanks from it can be stored in the freezer and taken out as needed.
  • Basic option.
  • Nasturtium Snack Butter
  • - Take 50 grams of high quality butter at room temperature and beat in a bowl until fluffy.
  • Finely cut with a knife the washed and dried leaves, flowers and unopened buds of nasturtium.
  • - Add salt, ground pepper (preferably a mixture of peppers) and finely chopped leaves and flowers of nasturtium to the oil. Mix well. Try it with salt and, if you want, you can add a few drops of lemon juice and a little zest if you want! (Lime will be even more useful.) I sometimes add a little more !!! finely chopped hot pepper.
  • - Put the butter in a pastry bag and, if possible, beautifully plant the roses on the saucer. I didn't have any pastry nozzles on hand!

  • - Freeze the roses in the freezer carefully so as not to wrinkle.
  • - Serve directly to the table with your favorite dishes!

Note

Nasturtium (Tropaeolum) is a herb that belongs to the nasturtium family. In Russia, this plant, brought from Holland, was known as the capuchin, which is associated with the shape of the flower itself, imitating the hood of a monastic cloak. The fact is that "capuchin" and "hood" are brothers. Later, the name "nasturtium" stuck.
But the official name - Tropaeolum - was given to this beautiful plant by Carl Linnaeus. He saw the similarity in the leaves of the nasturtium shields of the warriors, while the flowers of the plant reminded him of the blood-stained helmets of defeated enemies, which were hung on the pillars (this is how the Roman soldiers marked victory). These columns were called tropaeolum.
Interesting ! The packages with nasturtium seeds I bought in Germany bore the inscription "kapuziner tropaeolu", that is, the name united several theories into one whole.

The medicinal properties of nasturtium are difficult to cover in one topic. It is anti-inflammatory, and diuretic, antitumor, tonic, blood-purifying, antibacterial action.
Based on their composition, nasturtium preparations are useful for neutralizing pathogenic microbes, normalizing metabolic processes, and enhancing the body's protective functions.
But the most valuable is the ability of nasturtium preparations to eliminate attacks of angina pectoris, dilate blood vessels and improve blood supply to the heart muscle.
This is the third year in a row that I have been planting nasturtium and using it in food after having tried a similar oil in a European restaurant.

Then the vinegar is drained, and the seeds are poured with fresh marinade with spices, as for cucumbers. Instead of vinegar, I use brushes of red currant berries - by eye, about one third of a glass for two mayonnaise jars.

There is another recipe for "capers": pour 200 g of flower buds (or buds, flowers) with marinade. Its composition: take 1 tbsp for 1 liter of water. spoon of 6% vinegar, 50 g of sugar, 2 teaspoons of salt, pepper and bay leaf. Bring everything to a boil and cool. They are used for dressing saltwort, pickles, soups, marinade from them - for borscht.
