Honey cake on kefir

Ingredients

Dough:
Eggs (C0) 2 pcs.
Sugar 1 tbsp.
Honey (liquid) 2 tbsp. l.
Kefir 300 ml
Flour 2 tbsp.
Soda 1.5 tsp.
Cream:
Fat sour cream 500 ml
Sugar 0.5 tbsp.
Vanillin taste
Prunes 100-150 g
Almonds (roasted)* 150 g

Glass = 250 ml

Cooking method

  • Dough:
  • Redeem soda in kefir. Beat eggs with sugar at the highest mixer speed until thickened. Beat without stopping, pour in honey. Carefully pour in kefir, mix at a low mixer speed. Add sifted flour. Mix gently at the lowest mixer speed (or with a spatula). The thickness of the dough should be like a biscuit. Pour the dough into a greased form (I have a split 26 cm diameter). Bake at 180 degrees for 30-35 minutes until dry. Cool the cake completely, then cut.**
  • Cream:
  • For the cream, beat the sour cream with sugar and vanilla.
  • Assembly:
  • Spread cream on the cake. Place a layer of finely chopped prunes between the cakes*** Sprinkle the top and sides of the cake with chopped almonds. Put in the refrigerator to soak (I stood the night)

* Can be substituted for walnut
** My cake came up with a dome, so I cut it into 2 parts. The top cake is much thicker
*** The prunes got wooden, I had to boil it first until soft

I baked a cake for my grandfather's 80th birthday. The whole family approved.

The recipe was found on the Internet. I changed the proportions for myself.
Original proportions (for 4 cakes):

2 cups of flour
2 cups sugar
2 glasses of kefir
2 tablespoons honey (melt the honey if thick)
2 eggs,

And just try to mix thick sour cream with powdered sugar with a spoon. I do this when there is no fatty sour cream. But there is always 20%. You can spread some kind of fruit yogurt, just not liquid

Lena, for some reason I have a prejudice towards sour cream cream (most likely a negative experience, forgotten over the years).
Maybe I overexposed a little cake in the cartoon? and the top is more rubbery than necessary? next time I'll turn it off earlier (about an hour baked)
