Ingredients

Whole fish (of your choice) 1 PC
Fresh or dry herbs: (I didn't have everything)
Rosemary
Badian
Tarhun
Lemon Grass
Cinnamon
Thyme
Dry pepper mixture
Caramelized lemon 1 large
Sea salt Taste
Olive oil 1 tbsp. l.

Cooking method

  • This recipe was given to me by my friend who attended a master class of one well-known cook in Ukraine. I got a few recipes from her. While I prepared the first one. My husband and I were satisfied. We will try others too!
  • So, we prepare the fish:
  • I have a trout here.
  • No fresh herbs, use dry ones. Do not overdo it with dry ones only.
  • First, caramelize the lemon.
  • Bio lemon or regular, but well washed with a brush, cut into thick circles and fry in a hot pan for 30 seconds on each side. Add 1 tbsp. l. honey and continue to fry the lemons until light caramelization on both sides.
  • Fish in aromatic herbs and caramelized lemon
  • Peel fish from husks and entrails, wash well. Make 3-4 cuts on the fish on each side obliquely to the bone, rub the fish with salt and pepper, sprinkle with olive oil. Heat some olive oil in a frying pan and fry the fish for 30 seconds. on each side, trying to keep the skin intact. (I personally did not fry).
  • Cover a baking sheet with parchment paper, lay out the herbs, fish on top, and then the caramelized lemon. Leave the fish to marinate for 40-60 minutes.

  • In the photo, for beauty, I put one lemon, I recommend using a huge lemon and lay out all the slices.
  • Cook fish at 180 degrees for 20 minutes. After the oven let stand for 5-10 minutes!
  • I have cauliflower baked in cheese hollandaise for a side dish!

Mom Tanya, cool nick! Bio lemon, the one that is not waxed. They look ugly, of course, not so lacquered and shiny. This wax is also on oranges. If you take a zest or a lemon, an orange with a skin, then clean it with a brush under a hot stream of water. We have regular lemons and bio. When I need juice, I take the usual ones. For example, my mother in Kiev does not have bio, then I make her wash them for a long time. You take an apple from the store and rub the skin with a knife blade, you will see wax for apples. And for citrus fruits it is even worse, there are like big pores! If you are not on this topic, then skip the word bio!

Mom Tanya, I also. I'll go to the market and scrub with my fingernail whether there is wax or not. But we have little without wax. Then I take off the skin and that's it. But the Germans even openly say that there is wax in citrus, foil for hot food is harmful, aluminum accumulates. Take it only for cold dishes! Wash knives after chicken and stuff like that.
