Onion 70 g
Garlic 2 tooth
Fresh carrots 300 g
Fresh ginger 20-40 gr
Dry apricots 100 g
Olive oil 2 tbsp. l.
Curry 1 tsp
Vegetable or meat broth 1 l
Salt pepper Taste
Dry white wine 200 g
Cream (milk) 100 g
Prosciutto or ham 8 cous

Cooking method

  • This soup is one of my favorites. I highly recommend it for lovers of carrots and ginger. And by the way, carrots are not felt at all! You can also surprise guests or a man! The first time I tried it on a visit and when I came home, I immediately began an active search for the recipe the next day. Found ... a simple recipe, especially the favorite soup of the Queen of England. To celebrate, I did it in a couple of days. What can I say, NOT THAT. What a Queen, I will not believe, our friend had a hundred, not a thousand times tastier. Well, today everything was different, now I have a long-awaited recipe. The recipe from the book of the famous chef. I was waiting for him for two months. Now I am sharing it with you!
  • So, let's cook soup!
  • Onions, garlic, carrots, peel and cut into medium cubes, dry apricots into strips. Put out all this until half cooked with 2 tbsp. l. olive oil. Add curry.
  • Carrot and ginger soup (German recipe)
  • Meanwhile salt and pepper the broth. Add vegetables and simmer over low heat for 10 minutes. Add wine and leave to simmer for 10 minutes. Add cream or milk. Leave on the switched off stove for 5 minutes.

  • Then puree well with a blender. Pass through a sieve 2 times.

  • To taste if you need to add salt or pepper. Serve hot with ham and croutons. Also delicious with toasted almond flakes - tested!

The soup is easy and quick! For spicy lovers, I recommend adding 40 grams of ginger (which I did). For those on a diet, take milk instead of cream. Make this delicious soup you will love it!

Irina, when I first tried it myself, I just fell in love with it. I would never have thought that there are dry apricots and wine. I was very surprised to see them in the recipe. But if you like a more pronounced and spicy taste of ginger, take not 20 grams, but more!

As for me, not spicy ... Ginger gives a slight spiciness, and curry is not spicy at all. I have different curries, no spicy ones. You are not confused with another condiment. And in general, give up curry, I once forgot to put it, it was also delicious! Try it, this is an unusual soup. I just got ready to cook it tomorrow for my beloved family!
