Ingredients

Beet 1 PC. average
Potato 1-2 pcs.
Egg 1 PC.
Fresh cucumbers 1-2 pcs.
Sausage or boiled meat (optional, without it) 100 g
Citric acid 1/8 tsp
Salt pepper taste
Sugar 1/2 tsp
Green onions, parsley, dill 1 bundle
Sour cream to serve

Cooking method

  • Grate the beets on a coarse grater, pour into boiling water (1-1.25 l), add citric acid, salt and sugar, boil for 10 minutes, removing the foam, cool (I do this in the evening). Boil the egg and potatoes, peel and cut into small cubes. Grate cucumbers on a coarse grater; chop meat or sausage, onion and dill. Mix everything, cool, add salt, if necessary, dilute with mineral water / whey / boiled water, serve with sour cream.

All recipes are based on boiled vegetables, eggs and meat, cut into cubes and diluted with something cold before use - kvass, mineral water, kefir, whey or buttermilk, vegetable broth. Cold soups are prepared differently in the cuisines of other nations. Most often, everything is cooked at the same time, then cooled, served in its original form (for example, minestrone), or mashed (gazpacho, etc.). Cold okroshechka soup is good to eat in hot summer, but delicious at any time! In the Kuban, many families like to eat lean borscht chilled in summer (and not okroshka, rather minestrone, only slicing not into cubes). Yes Yes, Merri, I agree: in the Kuban cold borscht is called ordinary borscht, cooked (yesterday) with sunflower oil (and better, if "fragrant", I don't like it so much), and then cooled down, straight from the refrigerator.
