Dried tomatoes 20 pcs.
Wine vinegar 2 tbsp. l
Water 100-150 ml
Sugar 1 tsp
Garlic 2 small cloves
A mixture of Provencal or Italian herbs 1 tsp
Olive oil 1 tbsp. l
Mozzarella and purple basil for salad 1+1

Cooking method

  • In our family, Caprese salad is a frequent guest on the table. As you know, the classic version is made from mozzarella cheese, fresh juicy tomatoes and green basil and symbolizes the colors of the Italian flag.
  • But there is an equally interesting variant of Capreze, with sun-dried tomatoes, purple basil and red balsamic wine vinegar, or better with balsamic cream.
  • Dried sun-dried tomatoes can be reconstituted for use in salads and other dishes in this way.
  • Reanimation of dried (sun-dried) tomatoes.
  • - We take about 20 dried tomatoes (I have dried Italian ones that are very salty!) And fill them with boiling water to restore moisture and get rid of excess salt for 20-30 minutes.
  • - Take out the tomatoes, dry them, sprinkle with a mixture of Italian or Provencal herbs, pepper and mix with finely chopped and crushed garlic. We put it in a clean storage jar.

  • - Then we cook the marinade: boil 100-150 ml of water with 1 tsp. sugar (if the tomatoes are unsalted, add salt to taste). After dissolving the sugar, add at least 2 tbsp. l wine vinegar and 1 tbsp. l olive oil.

  • - Mix the marinade and immediately pour boiling over our tomatoes. Close and after cooling, put it in the refrigerator.
  • - We start enjoying ourselves in a couple of days!

  • Capreze salad recipe.
  • Cut the sweet tomatoes and mozzarella into circles, lay them in layers. By the way, Italians sometimes put the whole mozzarella in the center of the plate;)
  • Season with pepper, sprinkle with balsamic vinegar, sprinkle with Italian herbs, sprinkle generously with good olive oil, preferably first pressing, and garnish with basil !! (see main photo)
