Fried pickles

Fried pickles

Ingredients

Salted cucumbers
Carrot
Garlic
Mayonnaise
Frying oil

Cooking method

  • Grate the unpeeled cucumbers, drain the liquid. Fry in vegetable oil, the remaining liquid should evaporate, and the cucumbers should be slightly fried. Peel raw carrots, grate on a medium grater. Fry, well, it is loudly said, to dry, or something)) Combine carrots with cucumbers. The cucumber-carrot ratio is adjusted according to the degree of salinity of the cucumbers. My cucumbers were very salty, so the carrots are slightly larger in volume. Crush a clove of garlic and chop finely.
  • Fried pickles
  • Add quite a bit of mayonnaise.
  • Fried pickles
  • Stir and spread on black bread.
  • World snack.
  • Fried pickles

Note

There is nothing to say about the budget of this snack. But tasty, and you can put it on the table. And already in the country or in nature it is generally irreplaceable

When I started to read I thought (fuck a button accordion) why fry pickled cucumbers. I read it. And indeed for bread as a snack itself that!
celfh
Irina, try it, it’s very tasty)) I myself would not have thought of frying cucumbers. And on FB I communicate with Russian-speaking girls from Japan. One of them, in a nastolgic impulse, told about fried pickles, but with tomato paste. This option does not work for me, my husband does not like it. I found another one with mayonnaise. Liked.

Well, if it's so boring, then perhaps I'll try. Don't you need to squeeze the cucumbers? Otherwise they will fry for a long time.
celfh
No, I didn't press. She rubbed it into a bowl, held it lightly with her hand and poured the brine.

This is where it is, we don't even have a budget.
And my sister makes pies with such a filling, very tasty !!!
Ne_lipa
That's how skillful you have, everything is so simple, but I'm sure it's very tasty I fry pickled cucumbers myself for pickle, I didn't think of a snack

Why? Are cucumbers expensive?

Ne_lipa, Thank you!

And if you add minced meat and fry it together with ochik. And then spread on the bread. And pour the ketchup on top moderately. And under a pile of it all crumble.

celfh, thanks for the interesting idea. I just had a jar of cucumbers lying around. I tried your way today - cool. The taste is unusual, there is nothing even to compare with, but with black bread (I dried the croutons) - very peculiar and tasty. And I would say satisfying. Thanks again!

An interesting spread on sandwiches.

And I, after reading the title, thought it was a cucumber cut for a hodgepodge.
natushka
Delicious! Pies with fried pickles like mushrooms - delicious too! And I make pizza with them + sausage, cheese, etc., everyone likes it.
celfh
Whoever fasts knows how sometimes something is missing to spread on bread and have a quick snack))
Therefore, I raise the topic)) Today my carrots are very sweet, so frozen cranberries are very appropriate)))

Fried pickles
Kamena
Tatiana-Celfh, hello and prosper!

In Tallinn, the Viru hotel restaurant used to serve delicious hot sandwiches.

On a piece of white bread - carrots (grated on a coarse grater) with pickled cucumber (small slices). More carrots, fewer cucumbers (just to add some spice).
Above - two small sausages with the tips cut crosswise.
Or was this one large sausage first cut in half across? And then - crosswise.

Raw carrots with cucumber were slightly stewed in vegetable oil (about 5?).
It was all salted (?), Sweetened (?) And seasoned with black pepper and grated nutmeg.

This sandwich was heated in the oven. The sausages warmed up and became like flowers.

Perhaps a piece of bread was greased with a little butter on one side. And this side of the sandwich was laid on a baking sheet.
Or a baking sheet was greased with vegetable oil. Or maybe the bread was put into the toaster first?
The finished hot sandwich had a slightly fried (?) Crisp bottom underneath. Or was this crunchiness just from the heat of the oven?

Such a sandwich was supposed to be eaten with a knife and fork. Oh, how delicious it was for us !!! ...

I don't remember the name of the sandwich. My friends only heard about such sandwiches from me. I have not seen such a recipe in cookbooks either. ... Even (!) In the Estonian book "Sandwiches" ...
Then my husband and I decided to try to make the "spread" ourselves. It turned out very similar. But there was still a difference in taste.
We have it more "vigorous" turned out. More aromatic. We obviously poured more pepper and nutmeg.
Sausages used their own, local. In addition, on the taste, after all, the variety of carrots affects, and the pickling of cucumbers. Yes, and the proportion of carrots and cucumber. We got grated carrots in a frying pan - somewhere 2-3 cucumbers.

We greased the baking sheet with vegetable oil a little.

And we cut the sausage differently: lengthwise into two parts. And on the tips - two cuts (2-3 centimeters).
This makes the sandwich flatter. And it warms up better (more evenly). But less spectacular ... and forks with knives we had a rest.

We now use such a carrot with a cucumber as a side dish - for sausages, sausages, for fish, for meat. Squid with rice is also good.
Tatyana, thank you for the reminder. Today we will have a gorgeous breakfast - hot sandwiches! Cucumbers, however, will be from a purchased jar - pickled.

Sincerely. Kamena-Lena.
celfh
How well written! Thank you Lenochka! I will definitely experiment with spices))

I really wanted to!
celfh
Natalia, if you want, then you need to do it!))
Kamena
Tatiana-Celfh , hello and prosper!

With your light hand, our family has been "sitting" on sandwiches for a week. And with a sausage, and with "frog" (minced chicken pancakes), and with rings of boiled squid, with strips of bacon - all this is not budgetary, but delicious. Only I can eat the budget - it tastes good to me "just like that".

I specially weighed the carrots and cucumbers. We get 5: 2. Approximately.

That is, for 500 grams of grated carrots - 200 grams of cucumbers. Carrots - "home". Cucumbers - from the store - barrel, loose.

Pour 4-5 tablespoons of vegetable oil (deodorized sunflower oil) into a preheated pan. Medium fire.
I put carrots. I stir intensively so that the carrots are all oiled from all sides. Oiled up?
Then I make the fire a little less. Let the carrots pass through. You can even cover it with a lid. To also steamed better.

Now quickly grate cucumbers. Indeed, it is very convenient to rub cucumbers! Especially if you rub it in the same bowl in which you rubbed the carrots. Tatyana, thanks for the advice!!!
Or I cut it finely (or even quite finely) - but then I have to wash the cutting board)).

The texture of the "spread", of course, depends on how the cucumbers are ground.

I add cucumbers (with cucumber juice) to the carrots. I stir it.

Sweeten with sugar - 1 tsp. or a little more. Sugar makes the taste "bulkier".
Salt - about 1 tsp.
Freshly ground black pepper - to taste.

I rub the nutmeg on a fine metal grater. It turns out "fluffy" powder - 1/4 - 1/2 tsp. do not tamp!
First, it is better to add - on the tip of a knife, because the taste of this wonderful and healthy nut is very bright and specific. For an amateur. But he greatly ennobles vegetable dishes.

By the way, nutmeg is also a powerful antioxidant. So the "spread" can be used as a cosmetic that acts from the inside to rejuvenate.

Oh, distracted, sorry. It's good that the fire under the pan is small)).

So, everything has been stewing together for 2-3 minutes. Are all the components "good friends"? Let's try.

How does it taste? How for a bite? Maybe something to add? If the carrot is completely "aldente", you can stew a little more.

If the oil is all absorbed, then you can add a little boiling (!!!) water. In order not to dilute excess fat.
And put out as needed.
Yes, Tatyana, a slice of finely chopped garlic adds an interesting taste! And the usefulness is increasing.

In addition, almost all dishes (with the exception of desserts and sweet pastries) that are baked in the oven noticeably benefit from the addition of garlic, IMHO. At least a clove! ABOUT! Garlic, probably, expels evil oven spirits))).
Sorry for a lot of bukoffs). With gratitude and respect. Kamena-Lena. ...

We love fried cucumbers. And especially in Post

Fried pickles
Igrig
Tatyana,
Suddenly, unexpectedly, I joined your almost authentic recipe!
Frankly, although, as you well know, I am open to any experiments in cooking, but, I must confess, it's hard to believe that fried cucumbers are delicious ...
I say without any stretch: IT IS DELICIOUS!
Today my wife made "rassolianka" - this is fusion (pickle and hodgepodge), but this is a separate song ...
She stewed-fry in a frying pan onion-carrot-pickled cucumber-tomato!
So it was like lightning struck me: here they are dear ones!
I cut off a piece of bread, the bake itself (plain white, sprinkled with nigella on top). I had to lie at my feet, begging for a little bit of the contents of the frying pan, the promise not to drink beer for a week (well, I love beer) melted the heart of my beloved woman and I was allowed to apply a thin layer of ambrosia from the frying pan to a piece of bread.
If I knew that it would be so tasty, I would sell my soul to the devil for a second piece, and maybe even mine!
DELICIOUS! Even without mayonnaise (tomato replaced it) and garlic, but nigella gave such a wonderful noticeable taste that even, probably, when I myself make fried pickles next time, I will definitely sprinkle these seeds on a sandwich. And with garlic - it will be an explosion of emotions!
Thank you!
celfh
Igor, to your health!
