Ingredients

Boiled beets 1 piece of medium size
Chicken egg 1 PC
Greens (green onions, dill and other greens) bundle
Fresh cucumber 1 large
Radish 2-3 pcs
Kefir (1% for those who want to build) (tan, ayran) at your look
Salt, sugar, lemon juice. taste

Cooking method

  • The recipe for fridge, offered by me, has taken root in our family since the six years of living in the capital of Belarus, Minsk. It was shared with my mother of a beautiful soul by a woman with an interesting and difficult fate. She went through the entire Great Patriotic War as a nurse and then for many years worked in the same capacity in the city clinical hospital in Minsk. But that's another story!
  • This recipe has several features that make it delicious!
  • 1. The main part of the greenery must be covered with salt, preferably using a wooden pusher.
  • 2. Do not put potatoes directly into the soup itself.
  • 3. To preserve the color of the beets, use lemon juice, not vinegar.
  • 4. Place a piece of ice on a plate when serving!
  • For the rest, we cook as usual:
  • - steam the young beets (in my Oursson pressure cooker) or, better, bake them in foil until soft
  • - we take a good handful of greens, and dill and green onions should prevail (I still love cilantro very much) and crush, grind them with salt.
  • - rub the beets into a container on a coarse grater and sprinkle it with lemon juice, finely chop or rub an egg, add a grated or finely diced cucumber and be sure to cut into thin strips of radish.
  • - fill with cold kefir (1%), slightly diluted with cold boiled water (diluted to taste) or tan, ayran (we will get a fresher, spicy taste)
  • - mix well, taste and add a little sugar to soften and harmonize the taste.
  • - put in the refrigerator to brew for at least 30 minutes - the taste will definitely improve!
  • - serve in beautiful bowls with wooden spoons, put sour cream and sprinkle with chopped herbs, dropping a piece of ice into a plate!

  • We eat, snacking on boiled crumbly potatoes sprinkled with salt !! And this very moment will indicate that you are eating a real Belarusian "haladnik".

Note

This cold soup is especially tasty with young beets, and in Belarus it is often made with pickled beets - generally a masterpiece!
Alternatively, you can boil peeled beets in water, save water and dilute kefir with it.
There is also a Minsk-style chill in nature, they use sorrel in it!

This quote from the famous epic poem by Adam Mickiewicz "Pan Tadeusz" (1833) is one of the oldest testimonies of the centuries-old popularity of the Lithuanian-Belarusian chill. In both countries, it is prepared in approximately the same way, and Lithuania for Mitskevich is, first of all, the Novogrudok Voivodeship. Cold borscht is not an ordinary borscht, which was cooked, left for tomorrow and forgot to heat up. Cold borscht, and in Belarusian - chill ("khaladnik") is prepared especially in order to eat it with pleasure cold on a hot summer day, to fill up and cool down. Quenches thirst much better than Coke!

Cold sour soups made from beets, beet tops, sorrel are the pride of the Belarusian and Lithuanian cuisine. In the past, they were made on pre-fermented vegetables (kvass), now the technology has been somewhat simplified thanks to the use of kefir, sour cream or yogurt, but it seems that the taste has not suffered from this. You can use pickled beets ("beetroot") commonly sold in stores to prepare this traditional dish, or boil it yourself, and then generously add vinegar or citric acid. Many times sung by the writers of Belarus and Lithuania, the traditional beetroot cooler with boiled potatoes with a bite is especially indispensable in hot weather, and during fasting too. Only I exclude radishes and I don’t like potatoes, I cook without it, I don’t put ice either, because I get it out of the refrigerator, everything is already cold enough. And for meat lovers, I boil the meat separately and put it on a plate for those who like it. And I like to boil young beets for steam, grind greens with salt, I like kefir thick, I take 3.2% fat, but not watery, somewhere in half with water (boiled and chilled), everything else is to taste. It turns out yummy.

And the version with raw beets is made by our relative, who lives abroad. They are prone to raw food there, she calls it borscht.
