Ingredients

Chicken meat 700 g
Minced white bread 70 g
Breaded white bread 200 g
Cream 20% 150 ml
Onion 1 PC.
Salt, freshly ground pepper taste
Butter for minced meat 100 g
Butter and olive oil for frying

Cooking method

  • Place white bread for breading and 100 g of finely chopped butter in the freezer for 30 minutes.
  • We take a large broiler chicken, cut off the meat from it - remove the skin and fat.
  • Soak white bread without a crust in cream.
  • Then the chicken meat needs to be chopped - in the original recipe it is recommended to chop it with a knife, but in the 19th century there were no blenders and meat grinders with a large grill, so we simplify our task and pass the meat along with soaked white bread through a large grinder grill.
  • Chop the onion very finely and simmer with butter until transparent.
  • Add onion, salt and freshly ground black pepper to the minced meat, knead the mass well until fluffy. Now we throw small pieces of frozen butter here and knead quickly, then put the mass in the refrigerator.
  • For a more dietary option, the oil can be replaced with crushed ice.
  • Now we are preparing the breading, for which we take out frozen bread and rub it on a coarse grater. It should look like petals.
  • We take out the cutlet mass from the refrigerator, quickly shape the cutlets, breaded, fry in a mixture of butter and olive oils in a slow cooker on the "Fry" program on both sides, then bring it to readiness on the "Bake" program for 30 minutes.
  • These cutlets are not subject to heating - use immediately, while hot.
  • If we cook in the traditional way, that is, we fry in a pan, put on a baking sheet and put in an oven preheated to 180 degrees for 5-10 minutes.
