Mint ice cream with chocolate

Ingredients

Milk 1 stkn
Cream (from 33%) 2 stkn
Sugar 3/4 stkn
Salt pinch
Mint leaves 2 glasses (densely filled)
Egg yolks 5 pieces
Dark chocolate (broken into pieces) 140 g

Cooking method

  • Are there any other mint ice cream fans? I really love this combination, it’s perfect for me!
  • Preparation:
  • Heat milk, 1 cup. cream, sugar and salt in a saucepan over medium heat, stirring occasionally to dissolve the sugar. When the sugar has dissolved and the cream is hot, add the mint leaves, stir and remove from heat. Cover and let sit for an hour.
  • Then, filter the cream, squeezing out as much liquid and flavor as possible from the mint leaves. Return the cream to the saucepan and heat again until hot.
  • Beat the yolks separately until light and creamy. Without stopping whipping, pour about a third of the hot cream into them in a thin stream, then pour the egg mixture into a saucepan to the remaining creamy one and boil over medium heat until thickened (do not boil).
  • Filter the resulting cream (I didn't) and add the remaining cream. Cool the cream to room temperature.
  • If you have an ice cream maker, put the future ice cream in to cool completely, then cook in the ice cream maker according to the manufacturer's instructions.
  • If there is no ice cream maker, place the ice cream in the freezer (it freezes fastest in a metal container), covered with foil, for a couple of hours or until it grabs at the edges. Then break up the crystals formed with a metal spoon, hand blender or mixer. Repeat this procedure 2-3 more times. This will prevent the formation of crystals and result in soft, smooth ice cream.
  • When the ice cream is ready (if made without an ice cream maker, then after the last stirring), melt the chocolate in a water bath or in the microwave (1 minute on medium power, then stir and repeat if necessary). Put some of the ice cream in a container, drizzle with chocolate, repeat until you run out of ice cream and chocolate.
  • Place in the freezer.

I bought 50 g of mint, I didn't measure it with a cup, I just put the leaves in the milk and cream. The aroma and taste is very aromatic and with so much. 4 egg yolks instead of 5. Otherwise, everything is according to the recipe.
