Potato latkes (based on Karaidel recipe)

Ingredients

potatoes 1 kg
garlic 3 cloves
egg 1 piece
corn starch 4 tbsp. spoons
spices to choose from (black or red pepper, smoked paprika, ground cumin, etc.) taste
salt taste
vegetable oil (for frying) about 1 stack.

Cooking method

  • 1. Grate the potatoes on a coarse grater (I rub the Berner Baby Greyter or Roco grater).
  • 2. Squeeze the garlic through a press.
  • 3. Combine potatoes, garlic, starch, egg and spices (your choice).
  • 4. Heat oil vigorously in a skillet. Spread 1 tbsp. spoon of potato mass at a distance from each other, spread with a spoon and fry on both sides until crisp.
  • 5. Serve hot.

I changed it a bit and cook it regularly. I like that, unlike potato pancakes, you don't need to squeeze the potatoes, plus the light aroma of fried garlic ... um ...

I slightly changed the recipe.

Instead of potato starch, I take corn starch, the juice binds better, and there is no need to mess around like that, stirring the mass every time when frying. Starch can be substituted with wheat flour.

I never found celery seeds, so I just ruled out.
I tried adding dill seeds from umbrellas that are sold for harvesting - not bad, but not that.
Other seasoning options that I liked: black or red ground pepper, smoked paprika (just don't overdo it!), Ground cumin. So, due to spices, you can change the taste of a familiar dish.

Sometimes I rub a small piece of celery root together with potatoes, it gets a very special taste! (in this case, exclude garlic)

I usually either bring them from the dacha, or buy brooms from these dill umbrellas in the market in August-September (they are sold for canning cucumbers). I dry it upside down, then peel it and in jars. Dill seeds are very tasty to grind and add to black bread.

Yesterday I made latkes in a Steba SG-40 sandwich maker. I put the celery seeds. I warmed up the sandwich maker, poured a teaspoon of sunflower-olive oil into each cell and laid out the potato mass in 2 tbsp. spoons, after 10 minutes she turned over the triangles (changed their places with the neighboring ones), because oil did not pour on top and they blushed badly, and baked for another 7 minutes. They just ate with sour cream. Very tasty, unusual, I will repeat it today. Thank you!
