Coconut cookies with chocolate

Ingredients

Coconut flakes (I have cake) 90 g
Softened butter 110 g
Sugar 80 g
Liqueur Baileys 35 g
Baking powder 1/2 tsp
Wheat flour (I have 1c) 200 g
Dark chocolate 60 g

Cooking method

  • Coconut cookies with chocolate
  • Beat butter with sugar and Baileys.
  • Add flour, baking powder and coconut flakes. Beat until smooth.
  • Divide the dough into 3 parts, from each we form a sausage with a width of 2-3 cm.Wrap in plastic wrap and put in the refrigerator overnight. I had the dough for 2 days. To speed up the process, you can put the dough in the freezer for 2 hours.
  • Cut the frozen dough into circles, 1 cm thick, put on a baking sheet at a distance from each other.
  • Bake at 200C for about 20-30 minutes until browning. The exact time depends on your oven.
  • Melt the chocolate in a water bath or in the microwave (1 minute at full power). Dip the cooled biscuits to the middle in chocolate, remove the excess with a knife.
  • Place the cookies, chocolate side up, on the silicone hardening mat.
  • And enjoy.
